Instant Pot Rice Pudding with Almond Milk

Instant Pot Rice Pudding with Almond Milk was a pleasant surprise.  This dairy free version of this traditional dessert is a delicious and creamy blend of comfort and flavour. 

My husband has often requested this dessert because he likes it covered in cream and brown sugar.  

I have to admit I have never eaten rice pudding before.  It just never appealed to me and everyone always made it with regular milk, which I have to avoid.

 

So if I was going to cheat it wasn't going to be with a bowl of milky rice!!

Rice Pudding with Almond Milk, loaded with raisins and covered in a sweet topping, made me a convert to this traditional dessert.

To make this easy Rice Pudding dessert I poured some water and almond milk into the Instant Pot.

Then I stirred in some granulated sugar and vanilla extract.

Next I sprinkled in some minute rice.  I did not stir it, but gently pushed it down into the liquid with a large spoon.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 12 minutes.

Once the Instant Pot was done cooking, I  immediately turned the steam release handle to the venting position and did a Quick Release.  

I dumped in some raisins.  This is optional.  You could stir and serve without adding in the raisins.

I stirred in the raisins and let the pudding sit for about 2 minutes.

After two minutes I spooned out individual servings.

Everyone topped their pudding off according to their individual tastes.  

Some preferred brown sugar and a bit of cream.

Others preferred a mixture of ground cinnamon and granulated sugar.

I preferred my Instant Pot Rice Pudding with Almond Milk, covered in both the brown sugar and cinnamon sugar mixture!

No matter which topping you prefer, every mouthful of this easy pressure cooker, dairy free rice pudding will envelope you in its sweet and creamy warmth!

Ingredients You'll Need to Make this Instant Pot Rice Pudding with Almond Milk:

  • 4 cups water
  • 1 ½ cups almond milk
  • 3 tablespoon vanilla extract
  • ½ cup granulated sugar
  • 2 cups minute rice
  • ⅔ cup raisins (optional)

For serving:

  • ground cinnamon
  • granulated sugar
  • brown sugar

How to Make Instant Pot Rice Pudding with Almond Milk:

  1. Pour the water and almond milk into the Instant Pot.
  2. Stir in the granulated sugar and vanilla extract.
  3. Sprinkle in the minute rice and use a spoon to gently push it into the liquid. Do not stir.
  4. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 12 minutes.
  5. Once the Instant Pot is done cooking, immediately turn the steam release handle to the venting position and do a Quick Release.
  6. Remove the lid and add the raisins if you are using them. Stir the contents and allow to sit for 2 minutes.
  7. Spoon into serving dishes and top with brown sugar, a mixture of cinnamon and granulated sugar, or both!
  8. Enjoy!
