The first step to make Instant Pot Sirloin Roast with Mashed Potatoes was to peel and cut the potatoes.  How many depends on how many people you have eating the meal.  I used 6 large potatoes and then placed them in a steamer basket.

The next step was to pour the olive oil into the Instant Pot and turn the Pot to the saute function.  I also sprinkled in a teaspoon of Montreal Steak Spice for extra flavour.

Then I lowered the sirloin roast into the Instant Pot and sprinkled about a half teaspoon of Montreal Steak Spice on top of it.

I seared the sirloin roast on both sides for about 3 minutes a side.

Using a large serving fork I removed the roast to a plate, turned the sauté function off and added in the beef broth.  I made sure to scrape all the brown bits from the bottom of the pot. 

This deglazing step is very important.

After deglazing, I placed the trivet in the Pot and lowered the seared roast on top of it.

I placed the steamer basket full of potatoes on top of the roast.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 32 minutes.

When the Instant Pot was done cooking, I allowed it to natural release for 8 minutes.

Then I turned the steam release handle to the venting position to finish with a quick release.

After removing the lid I used oven mitts to carefully remove the steamer basket full of potatoes and the roast.

I also poured off the broth.  To 2 cups of broth I added the two packets of beef gravy mix and placed it in the microwave for 3 minutes stirring once.

While the gravy was cooking I returned the potatoes to the Instant Pot and added some of the remaining broth and 2 tablespoons of margarine.

I used a potato masher to make the mashed potatoes.

Ingredients You’ll Need to Make this Instant Pot Sirloin Roast with Mashed Potatoes:

  • 6 large potatoes peeled and cut
  • 2 tbsp olive oil

  • 3 cups beef broth
  • 2 tbsp margarine

  1. Peel and cut potatoes. Place them in a steamer basket for the Instant Pot or they can be placed around the meat before putting the lid on.
  2. Pour olive oil into Instant Pot and set to saute function. Sprinkle 1 tsp of the Montreal Steak Spice over the oil in the Pot.
  3. Lower the sirloin roast into the instant pot and sprinkle the top with 1/2 tsp Montreal Steak Spice. Sear both sides for about 3 minutes a side.
  4. Remove the roast from the Pot.
  5. Add the beef broth and scrape the bottom of the pot very well to deglaze.
  6. Return the roast to the Pot placing it on wire rack.
  7. Place the steamer basket with the potatoes on top of the roast.
  8. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 32 minutes.
  9. When the Instant Pot is done cooking, allow it to natural release for 8 minutes. Then turn the steam release handle to the venting position to finish with a quick release.
  10. Using oven mitts carefully remove the potatoes and the roast.
  11. Pour the broth into a measuring cup. Use 2 cups of broth and add the two packets of gravy mix to it.
  12. Stir well and then place the gravy in the microwave on high for 3 minutes, stirring once.
  13. While gravy is cooking return the potatoes to the Instant Pot. Add some of the remaining broth and 2 tablespoons of margarine. Use a potato masher to make the mashed potatoes.
  14. Slice the roast and serve with your favourite sides.

Why does a diff instant pot recipe say cook 5 minutes and naturally release for 30 minutes using the keep warm method to slow cook? Did urs turn out dry or juicy?

How long do we cook it without the potatos?

Hi Sarah, I am pretty sure you would cook it the same amount of time. It would probably take less time to come to pressure without the potatoes. I chose the cooking time based on the roast. Kathleen
