Instant Pot Pork Loin Roast with Garlic Mashed Potatoes

Instant Pot Pork Loin Roast with Garlic Mashed Potatoes is another easy pressure cooker recipe.  

This roast, flavoured with fall spices, turned out so moist and delicious.

Garlic mashed potatoes were a great addition to this Instant Pot meal.  This recipe yields six servings.

Add a favourite side, even some gravy if you prefer and enjoy!

The first step to making Instant Pot Pork Loin Roast with Garlic Mashed Potatoes was to rub it with some minced garlic and apple pie spice.

If you do not have apple pie spice on hand you can use ground cinnamon, nutmeg and ginger.

Then I put some olive oil in the Instant Pot and turned it to the Saute Normal function for 5 minutes and browned the sides of the pork loin roast.

After searing the roast I added in some water and used it to deglaze the Pot.

 This is a very important step, so do not skip it.  If you want to avoid the Burn message later when the Pot is coming to pressure you need to scrap any food bits from the bottom of the Pot.

Next I put the roast on the trivet and lowered it down into the Instant Pot.

I washed six large potatoes and arranged them around the roast in the Pot.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 20 minutes.

Once the Instant Pot was done cooking, I allowed it to do a Natural Release for 10 minutes before turning the steam release handle to the venting position.

I removed the lid and carefully lifted out the roast and trivet, leaving the potatoes in the Pot.  I have a large splatter guard that I used to drain the Pot.

Then I added in some margarine and minced garlic.  I also added in some almond milk a bit at a time.

I used a potato masher to mash the potatoes with the margarine and almond milk before slicing the pork loin roast which had been resting while I finished the Potatoes.

Instant Pot Pork Loin Roast with Garlic Mashed Potatoes is quick and easy enough to serve any night of the week.

Or you can save it for Sunday dinner and everyone will think you have been cooking all day!

Add another side and even some gravy if you choose.

Ingredients You'll Need to Make this Instant Pot Pork Loin Roast with Garlic Mashed Potatoes:

  • 1 tablespoon olive oil
  • 2.5 lb pork loin roast
  • 1 tablespoon Apple Pie Spice or 1 ½ teaspoon ground cinnamon, ½ teaspoon nutmeg, ½ teaspoon ginger
  • 1 tablespoon minced garlic
  • 2 cups water for Pot
  • 6 large potatoes
    After Cooking:
  • ½ teaspoon minced garlic
  • 2 tablespoon margarine
  • 1 cup almond milk

How to Make Instant Pot Pork Loin Roast with Garlic Mashed Potatoes:

  1. Pour the olive oil into the Instant Pot and turn the Pot to Saute Normal function for 5 minutes.

  2. New family favorite discovered this week! After I took the pork and potatoes out of the pot, I threw in some sliced carrots with a little extra apple pie spice and a splash of balsamic vinegar for 6 minutes and my husband was crazy about the whole meal. Thanks for sharing!!!
