Your full dinner can be cooked at the same time in one Pot.  Serve the potatoes baked or quickly mash them on the stove with some warmed almond milk and margarine.

The first thing I did to make Instant Pot Sirloin Tip Roast with Gravy and Vegetables, was season the roast before searing it in the Instant Pot.  To do this I rubbed Montreal Steak Spice all over it before brushing the top and sides with some Dijon mustard.

After it was covered with the Dijon mustard I turned the Instant Pot on to the Sauté Less function for 8 minutes and poured in 2 tablespoons of olive oil.

I quickly seared the roast on the top and bottom sides before removing it to a plate.

Then I poured in another tablespoon of olive oil and added in some sliced up mushrooms and a cut up yellow onion.

When the Pot shut off I added in one can of Pepsi and used it to deglaze the Pot.  This means I scraped any brown bits off of the bottom of the Pot to avoid the Burn message later when the Pot was coming to pressure.  

Deglazing is a very important step.  After deglazing I added in some beef broth.

Next I put my trivet in the Pot and placed the roast on top of it.  I rubbed the minced garlic on top of the sirloin roast.

For the vegetables, I wrapped the baby carrots in some tinfoil.

I did this with the potatoes as well.  I wrap or cover my vegetables if they are going to be in the Instant Pot for a longer cook time.

Once the vegetables were wrapped I placed them around the sirloin roast.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 60 minutes.

Once the Instant Pot was done cooking, I allowed it to do a Natural Release for 15 minutes. 

While the Pot was doing its Natural Release I warmed some almond milk and margarine on the stove because I wanted to mash the potatoes.  You could also serve them as baked potatoes.

After the Pot completed the Natural Release I turned the steam release handle to the venting position.

I removed the lid and carefully lifted out the potatoes, carrots, roast and trivet.

Then I turned the Saute Less function back on for 5 minutes and stirred in three packets of gluten free beef gravy.

While the gravy was thickening I unwrapped the potatoes because I wanted to mash them in the prepared pot on the stove. Keep them wrapped until you cut the beef if you are serving them as baked potatoes.

After letting the roast rest for about 8 minutes I sliced it up.

Ingredients You'll Need to Make this Instant Pot Sirloin Tip Roast with Gravy and Vegetables:

  • 3 tablespoon olive oil (divided)
  • 3 lb sirloin tip roast
  • 1 tablespoon Montreal Steak Spice
  • 2 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 yellow onion diced
  • 8 oz mushrooms sliced
  • 1 can pepsi
  • 1 ½ cups beef broth
  • 4 - 6 medium potatoes
  • 12 oz baby carrots
  • 3 packets of gluten free brown gravy mix (25 grams each)
  • IF MASHING POTATOES:
  • some almond milk
  • some margarine

    6. Add the remaining olive oil to the Pot and add the sliced mushrooms and cut up yellow onion.
    7. Stir until the Pot shuts off.
    8. Add in the can of Pepsi and us it to deglaze the Pot. Scrape any brown bits from the bottom to avoid the Burn message later when the Pot is coming to pressure.
    9. Pour in the beef broth and set the trivet in the Pot.
    10. Place the roast on top of the trivet and rub the minced garlic on top.
    11. Wrap the carrots and then the potatoes in tinfoil and place them around the roast.
    12. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 60 minutes.

  1. I made this recipe (Instant pot sirloin tip roast w/ potatoes and carrots and mushroom gravy) for my son, daughter-in-law, 4grandkids, my husband and myself and it was delicious. It even surprised me how well it turned out. The only thing I did different was instead of deglazing with regular Pepsi, I used Diet Coke and it was totally fine. I’m glad you recommended wrapping the carrots and potatoes in foil because they were perfect. I served this meal with a side salad and applesauce and couldn’t be more pleased how it turned out.
