The first thing I did to prepare this Meatloaf was place a whole sleeve of crackers inside a large Ziploc bag and then I used a rolling pin to crush the crackers into fine crumbs.

Now I prepared the sauce for the meatloaf.  I put bbq sauce, ketchup and maple syrup into a small mixing bowl.

I used a wooden spoon to stir all the ingredients together and then set the sauce aside until needed.

Next I dumped the extra lean ground beef into a large mixing bowl.

To the ground beef in the bowl I added the crushed crackers, 3 large eggs, 1/2 cup of the prepared sauce, salt and pepper.

I started blending all the ingredients together with a wooden spoon and then used my hands to finish mixing.

Now I lined a large loaf pan with tinfoil and sprayed it with cooking spray.

Then I scraped all the meat into the loaf pan.  

To finish I topped the meat with the remaining sauce I had prepared earlier.

I placed it into a 350F oven for 1 hour or until it reached the temperature of 160 degrees with a meat thermometer.

After removing it from the oven I allowed it to cool in the pan for five minutes.

Then I used the tinfoil to transfer it to a cutting board.

Ingredients You’ll Need to Make this Meatloaf:

  • 3/4 cup ketchup
  • 1/2 cup bbq sauce
  • 1/4 cup maple syrup
  • 2 lbs extra lean ground beef
  • 135 g Gluten Free Breton Herb and Garlic Crackers (5 oz box)
  • 3 eggs, large
  • 1/2 tsp salt
  • 1/2 tsp pepper

How to Make Meatloaf:

  1. Preheat oven to 350F.
  2. Line a large loaf pan with tinfoil and spray it with cooking spray.
  3. Put all the crackers into a large Ziploc bag and use a rolling pin to crush them into fine crumbs. Set aside.
  4. Prepare the sauce by mixing the bbq sauce, ketchup and maple syrup in a small mixing bowl.
  5. In a large mixing bowl blend the ground beef, cracker crumbs, eggs, 1/2 cup of the prepared sauce, salt and pepper. After initially mixing with a large spoon you will need to finish combining with your hands.
  6. Once combined scrape the meat into the loaf pan and push it down to form the loaf.
  7. Top the loaf with the remaining sauce.
  8. Place in the oven and cook for 1 hour or until 160 degrees is reached on a meat thermometer.
  9. Remove from the oven and allow to cool in the pan for 5 minutes.
  10. After 5 minutes use the tinfoil to remove it from the pan to a cutting board.
  11. Slice and serve immediately.
