Microwave Rainbow Fudge

This Microwave Rainbow Fudge swirls with playful pops of fruity colour in every bite.  The fruity mini marshmallows peek through the creamy base like tiny gems.

Before starting to cook Microwave Rainbow Fudge I  lined an 8 x 8 inch baking pan with tinfoil and sprayed it lightly with cooking spray.

Then I measured out the correct amount of white chocolate and added some sweetened condensed milk to a microwave safe container.

Then I placed the large Pyrex measuring cup in the microwave. I melted the contents on high for 1 minute.

After 1 minute I removed the mixture and gave a good stir before returning it to the microwave for 20 second intervals until the chocolate  was melted.

Once the chocolate had melted I stirred in some vanilla extract and a bit of salt.

Then I folded in some mini fruit flavoured marshmallows.

I made sure all the marshmallows were coated in the white chocolate.

Next I scraped the fudge into the prepared pan.  

I put the pan in the fridge to set for a couple of hours.

Once the fudge was hard I used the tinfoil to lift the fudge out of the pan. 

Then I used a sharp knife to cut it into squares.

The colourful marshmallows create a dreamy mosaic inside each slice.

Ingredients You'll Need to Make this Microwave Rainbow Fudge:

  • 18oz white chocolate chips
  • 14oz sweetened condensed milk
  • ⅛ teaspoon salt
  • 1 ½ teaspoon vanilla extract
  • 2 cups mini fruit flavoured marshmallows

How to Make Microwave Rainbow Fudge:

  1. Line an 8 x 8 inch baking pan with tinfoil lightly sprayed with cooking spray.
  2. Put the white chocolate in a large microwaveable bowl.
  3. Add the sweetened condensed milk.
  4. Place in the microwave and heat on high for 1 minute.
  5. Remove chocolate from microwave and stir contents.
  6. Return to microwave and continue heating for 20 second intervals until chocolate is melted.
  7. Add the vanilla extract and salt. Stir to combine.
  8. Fold in the marshmallows.
  9. Scrape into the prepared pan. 
  10. Place in fridge to set.  About 2 hours.
  11. Use the tinfoil to left the fudge out of the pan.
  12. Cut into squares.
  13. Serve and enjoy!
