Microwave Cherry Brownies - Gluten Free

Microwave Cherry Brownies is a quick and easy dessert recipe.  This gluten free treat is loaded with choolate flavour and cherries.

Baked in the microwave it can be finished in 6 minutes.

This recipe yields 10 - 12 servings.

Fudgy chocolate and cherries are a delicious combination.

If you like, add more flavour with an optional whipped cherry topping.

To begin making Microwave Cherry Brownies I dumped some cherry pie filling, granulated sugar, Bob's Red Mill 1 to 1 Gluten Free Baking Flour, cocoa and baking powder into a medium size mixing bowl.

Next I added in some vanilla extract and three large eggs.

I used a large wooden spoon to combine all the ingredients well.

Once the ingredients were well combined I prepared an 8" square baking pan by spraying it with oil.

Then, since the center would not cook in the microwave, I inverted a shot glass in the center of the pan and sprayed it with oil as well.

Next I carefully spread the brownie batter around the shot glass in the baking dish.

I placed the baking pan in the microwave and cooked on high power for 6 minutes.

After removing the brownie from the microwave I allowed it to cool before inserting a knife around the shot glass to remove.

Microwave Cherry Brownies are a chocolatey, gooey treat that can quickly be prepared and enjoyed!

To  make the optional topping I mixed together the remainder of the can of cherry pie filling and the Cool Whip dessert topping.

Add a dollop of topping to each Microwave Cherry Brownie as it is served.

  • ⅓ cup cocoa

  • Optional:

  • 1 Cup Cool Whip Dessert Topping
