To begin making Pineapple Casserole I put some Schar gluten free entertainment crackers into a ziplock bag.

Then used a rolling pin to crush them up finely.

Next I drained a can of pineapple tidbits; but I reserved 1/4 cup of the juice.

I put the tidbits, reserved juice, a drained can of crushed pineapple, some shredded cheddar cheese, granulated sugar and a bit of Bob’s Red Mill 1 to 1 gluten free baking flour into a large mixing bowl.

Then I stirred all of those ingredients together until they were well combined.

Next I scraped the pineapple mixture into a 1 1/2 quart casserole dish.

I melted some butter in the microwave.

Then I put the crushed crackers and melted butter into a small bowl.

I used a fork to get all the cracker crumbs coated in the melted butter.

Next I sprinkled the crumbs on top of the pineapple mixture.

I placed the casserole in the preheated 350F oven for 30 minutes or until golden brown.

Remove from the oven.
