To begin making Pineapple Casserole I put some Schar gluten free entertainment crackers into a ziplock bag.

Then used a rolling pin to crush them up finely.

Next I drained a can of pineapple tidbits; but I reserved ¼ cup of the juice.

I put the tidbits, reserved juice, a drained can of crushed pineapple, some shredded cheddar cheese, granulated sugar and a bit of Bob's Red Mill 1 to 1 gluten free baking flour into a large mixing bowl.

Then I stirred all of those ingredients together until they were well combined.

Next I scraped the pineapple mixture into a 1 ½ quart casserole dish.

I melted some butter in the microwave.

Then I put the crushed crackers and melted butter into a small bowl.

I used a fork to get all the cracker crumbs coated in the melted butter.

Next I sprinkled the crumbs on top of the pineapple mixture.

I placed the casserole in the preheated 350F oven for 30 minutes or until golden brown.

Remove from the oven.

  • 1 19oz can pineapple tidbits

  • 2 cups shredded cheddar cheese
  • ½ cup granulated sugar
  • ⅓ cup Bob's Red Mill 1 to 1 gluten free baking flour
  • 2 cups Schar Entertainment crackers, crushed
  • ½ cup butter, melted

How to Make Pineapple Casserole:

  1. Preheat oven to 350F.
  2. Drain the can of pineapple tidbits and reserve ¼ cup of the pineapple juice.
  3. Dump pineapple tidbits into a mixing bowl.
  4. Add the reserved ¼ cup of juice.
  5. Drain the crushed pineapple and add it to the mixing bowl.
  6. Add the shredded cheese, granulated sugar and gluten free flour to the mixing bowl.  Stir to combine.
  7. Scrape the mixture into a 1 ½ quart casserole dish.
  8. Put the Schar crackers into a ziplock bag and crush with a rolling pin.
  9. Melt the butter in the microwave.
  10. In a small bowl mix the cracker crumbs and melted butter until well combined.
  11. Sprinkle the crumbs over top of the pineapple mixture in the casserole dish.
