Stove Top Chicken Casserole – Gluten Free

Stove Top Chicken Casserole is an easy gluten free meal that will not heat up your kitchen.  This casserole is loaded with gluten free pasta and flakes of chicken.  

It is a tasty gluten free pasta dish thanks to a blend of seasonings and the addition of bacon!

Fried spinach leaves and diced tomatoes give every serving of this casserole a nice burst of colour.

To begin making this Stove Top Chicken Casserole I put a pot of water on high heat to boil for some gluten free elbow pasta.

Next I put a large frying pan on the stove and turned the heat to medium.  I added 8 slices of bacon to the pan.

While the water was coming to a boil and the bacon was cooking, I drained three cans of Flakes of Chicken before dumping them into a mixing bowl.

I added some dried parsley, dried basil, dried oregano and dried sage to the meat in the bowl.

Once the bacon was cooked I patted it with paper towel to absorb the excess grease.  I also drained most of the bacon grease from the pan.

I cut up the bacon into small pieces with a pair of scissors.

When the water came to a boil I added in some gluten free elbow pasta and reduced the heat slightly.

While the pasta cooked I used a fork to combine the flaked chicken and spices.

When the pasta was almost done I added baby spinach leaves to the bacon pan on med/low heat.  I stirred it while it cooked.

After 7 or 8 minutes I drained the pasta, rinsed it and added it back to the pot with about a tablespoon of olive oil. I stirred to coat.  You don’t want the pasta to be too soft because you will continue to heat it later with the other ingredients.

Next I dumped in the prepared chicken, chopped up bacon and a small can of diced tomatoes.  I stirred the ingredients together.

Then I added in the cooked spinach, Miracle Whip, salt and pepper.

After stirring in all the ingredients I left it on med/low heat for a couple of minutes to heat through stirring occasionally.

  • 12 cup water
  • 4 cups gluten free elbow pasta
  • 8 strips bacon
  • 468g Flakes of Chicken (3 tins) or left over cut up chicken
  • 1 1/2 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 1/2 tsp dried sage

  • 1 tbsp olive oil
  • 540ml diced tomatoes
  • 1 1/2 cups Miracle Whip
  • 1 tsp salt
  • 1 tsp pepper

  2. Place frying pan on burner and turn to medium heat. Place strips of bacon in pan and fry to desired doneness.
  3. Once bacon cooked remove from pan and pat off grease with paper towel. Drain most of bacon grease from pan.
  4. Cut bacon into pieces with scissors.
  5. Add pasta to boiling water and reduce heat slightly. Boil for about 7 minutes and then check for doneness. You don’t want pasta to be too soft because you will continue heating it with the other ingredients.
  6. While pasta is cooking dump the chicken into a mixing bowl and add the dried parsley, dried basil, dried oregano and dried sage. Use a fork to combine.
  7. When pasta almost done add the spinach leaves to the bacon pan on med/low heat. Stir as leaves cook for a few minutes.
  8. Drain pasta and add a tablespoon of olive oil to pasta pot. Rinse pasta and stir into oil in pot.
  9. Add in the prepared chicken, cut up bacon and can of diced tomatoes. Stir to combine.
  10. Add the Miracle Whip, cooked spinach, salt and pepper. Stir to combine. Leave on med/low heat for a few minutes stirring occasionally.
  11. When heated through, serve and enjoy!
