Ground Turkey and Potato Casserole

To begin making Ground Turkey and Potato Casserole, I washed and pierced 2 pounds of potatoes and cooked them most of the way in the microwave.

I wanted them to be a bit firm to cut into cubes after cooling a bit.

After removing the potatoes from the microwave I cut them in half to release some of the heat.

Then I diced up a yellow onion.

Next I put a little bit of olive oil in a skillet and turned the heat to medium.

Once heated I added in the diced onion and 2 pounds of ground turkey.

Then I measured in some oregano, sage, basil, salt and pepper.

I cooked until the meat was almost cooked through.  I stirred occasionally and broke the meat up as it cooked.

While the ground turkey was cooking I melted butter in a saucepan over low heat.

Then I whisked in some Bob's Red Mill 1 to 1 Gluten Free Baking Flour.

After the flour and butter formed a smooth paste I gradually whisked in some almond milk.  I increased the heat slightly.

I stirred the milk mixture until it was just starting to boil and then I turned off the heat.

Once the sauce was heating I grated some cheddar cheese.  I used marble cheese but you can use whatever cheese you prefer.

I also cut the cooked potatoes into cubes.

Once the meat was almost cooked through I added in some frozen vegetables.  I stirred them in well.

While the vegetables were heating I added the grated cheese to the heated sauce.

I also stirred in a pinch of salt and pepper to taste.

Once the vegetables were warm I stirred some sour cream into the meat mixture.

Then I greased a 9" x 13" baking pan.

I spread the meat mixture out evenly in the prepared baking pan.

Then I evenly dispersed the cubed potatoes out over the meat.

Next I poured the prepared sauce over the potatoes.

I finished preparing the casserole by sprinkling some grated cheese on top of the potatoes as well.

Then I placed the casserole in a preheated 400F oven for 50 - 60 minutes or until potatoes and cheese were brown.

I removed the Ground Turkey and Potato Casserole from the oven.

I let it cool for a couple of minutes.

To serve I used a large scoop in order to get the layers in each serving.

Ingredients You'll Need to Make this Ground Turkey and Potato Casserole:

  • 2 lbs potatoes of choice ( I used yellow-fleshed)
  • 2 tablespoon olive oil
  • 2 lbs ground turkey
  • 1 yellow onion diced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 ½ teaspoon oregano
  • 1 ½ teaspoon sage
  • 1 ½ teaspoon basil
  • 3 cups frozen mixed vegetables
  • 1 cup sour cream
  • 1 cup grated cheddar cheese or cheese of choice
  • Sauce
  • 2 tablespoon butter
  • 2 tablespoon Bob's Red Mill 1 to 1 Gluten Free Baking Flour
  • 1 ½ cups almond milk
  • ½ cup grated cheddar cheese or cheese of choice
  • pinch of salt to taste
  • pinch of pepper to taste

How to Make Ground Turkey and Potato Casserole:

  1. Preheat oven to 400F and grease a 9" x 13" baking pan.
  2. Wash and pierce the potatoes.  Cook on high power in microwave until almost fully cooked.
  3. Once cooked remove from microwave and cut in half to let some heat out so easier to cube later.
  4. Place the olive oil into a frying pan over medium heat.
  5. Dice the yellow onion.
  6. Add the ground turkey and diced onion to the frying pan. 
  7. Measure in the oregano, sage, basil, salt and pepper.
  8. Cook stirring often and crumbling the meat until onions are tender and meat is almost cooked through.
  9. While meat cooking prepare sauce by melting the butter over low heat.
  10. Whisk in the Bob's Red Mill 1 to 1 Gluten Free Baking Flour until creamy.
  11. Pour in the almond milk. Whisk to combine.
  12. Turn heat to medium and stir occasionally until it comes to a boil. Remove from heat when it boils.
  13. While the meat continues to cook and the sauce is coming to a boil you can grate the cheddar cheese or whatever cheese you are using.
  14. You can also cube the cooked potatoes.
  15. When the meat is almost cooked add the frozen vegetables to the frying pan and stir to combine.
  16. Stir the ½ cup of grated cheese into the milk sauce.  Stir in some salt and pepper as well.
  17. Stir the sour cream into the meat mixture.
  18. Spread the meat mixture out evenly in the prepared baking pan.
  19. Distribute the cubed potatoes out evenly over the meat.
  20. Pour the prepared sauce over top of the potatoes.
  21. Sprinkle top of casserole with the 1 cup of grated cheese.
  22. Bake in the preheated oven for 50 - 60 minutes or until potatoes and cheese are browned to your taste.
  23. Remove from oven and allow to cool for a couple minutes.
