Crock Pot Beef Chili

Crock Pot Beef Chili is the ultimate comfort food, packed with hearty ground beef, tender beans, and a rich tomato-based sauce.

This slow-cooked chili develops deep, savoury flavours as it simmers low and slow throughout the day.

This recipe makes a generous batch, making it ideal for feeding a crowd.  There will be about 12 generous servings.

To begin making Crock Pot Beef Chili I poured some extra virgin olive oil into a frying pan.

Once the oil was heated I added some ground beef to the frying pan.

Next I broke up the ground beef while it was cooking.

Once the ground beef was browned I scraped it into the Crock Pot.

I drained and rinsed a can of Bean Medley and a can of black beans. I dumped them into the Pot with the ground beef. Salsa has all the ingredients that I would normally throw in to make a chili.  So why not make life easier and just open a jar or two or three!  The heat intensity is up to you.  I used two mild and then added some medium to spice up the flavour a bit. 

Then I stirred all of the ingredients together well.

Next I put the lid on the Crock Pot and set it to 4 hours on High.  You could also set it on Low for up to 8 hours.

Once finished cooking I gave the Crock Pot Beef Chili another quick stir before serving.

The combination of beef, beans, tomatoes, and spices creates a perfectly balanced bowl of chili.

Serve it with shredded cheese, sour cream, or green onions for extra flavor.

Ingredients You’ll Need to Make this Crock Pot Beef Chili:

  • 2 tbsp olive oil
  • 2 lbs lean ground beef
  • 1 can bean medley (540ml or 18oz)
  • 1 can black beans (540ml or 18oz)
  • 2 jars mild salsa (650ml or 22 oz)

How to Make Crock Pot Beef Chili:

  1. Heat the olive oil in a large frying pan.
  2. Add the lean ground beef.   Break the beef apart while it is cooking.
  3. Transfer the cooked beef to the Crock Pot.
  4. Drain and rinse both cans of beans. Add them to the pot. 
  5. Dump all of the salsa and stewed tomatoes on top of the beef and beans. 
  6. Stir all the contents together.
  7. Place the lid on the Crock Pot and set to cook on high heat for 4 hours or on low for 8 hours.
  8. After the required time remove lid and give contents a good stir.
  9. Serve with fresh buns, toast or Tortilla Scoops!
  10. Optional: Sprinkle each serving with grated cheese.
