Apple Pie Patties – Gluten Free

Apple Pie Patties are a great way to use canned apple pie filling.  This gluten free pastry would be a delicious accompaniment to your afternoon tea!

This dessert is the perfect size to serve guests after indulging in a large meal.

This recipe yields 12 Apple Pie Patties when using a 3″ cookie cutter.

Enjoy the fall flavour of apples enrobed in a light, flaky pastry topped off with sweet, piped icing sugar!

To begin making Apple Pie Patties I first had to make one batch of Gluten Free Pastry.  Here is the link:

Once I had my two balls I put down some gluten free flour for rolling.  

Next I flattened the pastry into a disc and sprinkled it with flour. Then I placed a sheet of plastic wrap on top to prevent the roller from sticking to the dough.

Before cutting the rounds I opened a can of apple pie filling and ran a knife through it a few times to cut the apples into smaller segments.

After it was rolled out to the desired thickness I used a 3″ cookie cutter to make rounds for the Apple Pie Patties.

Then I placed a dollop of pie filling in the center of the round.

Scoop some apple pie filling on to a pastry round.

I used a spatula to carefully lift another round and place it on top of the apple pie filling.

Place a second round on top of the apple pie filling.

Then I used a fork to seal the edges.

Use a fork to seal the edges.

Next I sprayed a baking sheet with cooking spray to make sure they would be really easy to lift off when they were cooked.

I carefully placed the Pie Patties onto the cooking sheet.

I placed the baking sheet into a preheated 425F oven for about 20 minutes or until the pastry was golden brown.

I allowed the Pie Patties to cool completely on the baking sheet.  At this point you could serve as they are or follow the next steps to decorate each Pattie.

To decorate I dumped some icing sugar into a small bowl with a few tablespoons of water.  Add the water a bit at a time until you get your desired consistency.

Then I used a piping bag to pipe icing on each Apple Pie Pattie.  You could also cut a corner out of a small plastic bag to do this step.

Once the icing set I transferred the Apple Pie Patties to a serving plate.

Your taste buds will be delighted with the melt in your mouth pastry and burst of apple pie filling in every bite.  

These were sturdy enough to eat with your hands but to avoid any being wasted on the ground I served them up on plates!

  5. Open a tin of apple pie filling and use a knife to cut through apples to make them into smaller segments.
  6. Scoop about a tablespoon of pie filling onto center of round. I did not need the whole can of pie filling.
  7. Top with another pastry round.
  8. Use a fork to seal the edges.
  9. Transfer to the baking sheet sprayed with cooking spray.
  10. Repeat with other pastry disc.
  11. Place the baking sheet into the preheated 425F oven for about 20 minutes or until golden brown.
  12. Remove and allow to cool completely on pan.
  13. Once cooled dump the icing sugar and a bit of water into a small bowl. Add the water a bit at a time until you get your desired consistency for piping from a bag.
  14. Pipe icing onto each Apple Pie Pattie.
  15. Allow icing to set before transferring to serving plate.
  16. Serve and Enjoy!
