Bacon Wrapped Pineapple is an easy appetizer recipe. Use a few staple items to create a flavourful sauce and use some gluten free bacon.
I used partially cooked bacon so that the cooking time was reduced.

To begin making Bacon Wrapped Pineapple I peeled and cored a fresh pineapple, but you could also used canned chunks.
Then I cut the pineapple into chunks.
Next I took some partially cooked bacon out of the fridge. You could use raw bacon and double the cooking time.
Next I cut the bacon slices in half.
Then I placed one of the pineapple chunks on the 1/2 slice of bacon.
I wrapped the bacon around the pineapple and then held it in place with a toothpick.
Next I greased a small baking pan.
Then I transferred the wrapped pineapple to the baking pan.
Before baking in the oven I mixed up some sauce by combining brown sugar, corn starch, ketchup, and water(or pineapple juice if using canned).
Then I spooned the sauce over top of the bacon wraps in the pan.
I placed the baking pan in a preheated 375F oven for 20 minutes.
After 20 minutes I removed the baking pan from the oven.
You can serve the Bacon Wrapped Pineapple straight from the pan or transfer them to a serving tray.
This quick and simple appetizer is a great addition to any gathering or event.

- 24 chunks pineapple, fresh or canned
- 12 pieces partially cooked bacon

- 1 tsp corn starch
- 2 tbsp ketchup
