BBQ Shepherd’s Pie

Shepherd’s Pie is a favourite comfort meal in our home once the cooler weather arrives.  This gluten free, BBQ variation of this one dish dinner was quickly devoured!

You can choose to use Instant Mashed Potatoes or make your own mashed potatoes for the topping.  It is delicious either way! To save time I even leave the skin on for my mashed potatoes.

Cover the vegetables with real skin on mashed potatoes.

Another option is to use some more BBQ sauce of your choosing to drizzle on the top of the mashed potatoes before baking.

I have made BBQ Shepherd’s Pie with these variations and I enjoyed it however it was prepared!

This recipe yields six servings.  Pair it with a favourite side salad to add more colour, flavour and goodness to your meal.

However you choose to make BBQ Shepherd’s Pie, you and anyone joining you for dinner, will savour every bite of this delicious comfort meal.

To begin making BBQ Shepherd’s Pie I prepared the mashed potatoes.  You can follow the directions to make enough Instant Mashed Potatoes for 6 cups or prepare real mashed potatoes.  I leave the skin on mine.

Next I put some olive oil into a large frying pan and turned it to medium heat.

Then I chopped up one yellow onion.  I added two pounds of lean ground beef and the chopped onion to the frying pan.

I added some salt and pepper to the meat and onion mixture as it was cooking.  I cooked the mixture until there was no pink remaining.

After draining the fat from the meat I added in two packets of gluten free brown gravy mix and some water.

Then I added in a cup of gluten free BBQ sauce.  You can choose your favourite sauce.

I stirred until all the meat was coated in the sauce. I allowed it to just come to a boil before reducing heat to simmer.

Once the meat was ready I spread it out evenly in a 9″ x 13″ baking pan.

Then I spread some frozen mixed vegetables over top of the meat.

I spread the prepared potatoes over top of the vegetables and gently spread them out.  I have made this recipe with both instant and real mashed potatoes.

Next I took a bit more BBQ sauce and drizzled it over top of the mashed potatoes.  This step is optional.

Finally I put the BBQ Shepherd’s Pie into a preheated 400F oven for 40 minutes or until it was bubbling and the potatoes were turning golden brown around the edges.

I allowed the BBQ Shepherd’s Pie to sit for about 10 minutes to cool a bit before serving.

Serve up this easy dinner recipe with confidence any day of the week.

Whatever variation you choose to make you and your family will certainly enjoy this one dish comfort meal!
