Cherry Good Sweet Potatoes

Cherry Good Sweet Potatoes is the perfect side dish for any festive occasion.  This gluten free casserole is loaded with sweet potatoes, cherries and mini marshmallows.

Add some colour, plus a blend of sweet and savoury to your holiday meal with this delicious vegetable dish.

To begin I poked four sweet potatoes several times with a fork and then put them in the microwave. 

To calculate cooking time allow five minutes for the first one and add two minutes for each additional sweet potato.

Before removing the sweet potatoes from the microwave I poked them with a fork to make sure they were cooked through.  

Then I allowed them to sit for about 5 minutes before cutting them in half.

I used a spoon to scoop the flesh from the sweet potatoes into a mixing bowl.

Next I mashed the sweet potatoes with some brown sugar, margarine and salt.

Then I dumped everything into a casserole dish.  I used a small round one.

I spooned about half a can of cherry pie filling on top of the sweet potatoes.

The final touch was to make a ring of mini marshmallows around the edge of the casserole dish.

I placed the casserole dish into a preheated 350F oven for 25 – 30 minutes or until marshmallows browned.

Remove from oven and serve it up as part of your holiday meal or treat yourself to this delightful dish any time of the year!

Ingredients You’ll Need to Make Cherry Good Sweet Potatoes:

  • 4 cooked and mashed sweet potatoes
  • 2 tbsp brown sugar
  • 2 tbsp margarine
  • 1/4 tsp salt
  • 1/2 can cherry pie filling
  • 1 cup mini marshmallows 

How to Make Cherry Good Sweet Potatoes:

  1. Preheat oven to 350F and grease small casserole dish.
  2. Cook sweet potatoes in microwave on high power. Calculate 5 minutes for one potato and add 2 minutes for each additional potato. I used 4 large sweet potatoes.
  3. Scoop flesh from sweet potatoes into a large mixing bowl.
  4. Add the brown sugar, margarine and salt.  
  5. Mash to combine all ingredients well.
  6. Dump ingredients into prepared casserole dish.
  7. Spread the cherry pie filling evenly over top of the sweet potatoes.
  8. Create a ring on outer edge of casserole dish with the mini marshmallows.
  9. Bake in the 350F oven for 25 – 30 minutes.  Marshmallows should be browned.
  10. Remove from oven, serve and enjoy!
