Then I put some gluten free Italian salad dressing into a measuring cup.
Next I dumped the celery and some baby carrots into a small mixing bowl.
I poured some of the Italian dressing on top of the vegetables and stirred them together well.
Then I separated the chicken skin from the breast meat.
Next I poured the Italian dressing under the skin of the chicken.
I brushed most of the remaining Italian dressing on top of the chicken skin.
Then I brushed the last bit of dressing in the bottom of the roasting pan and on the lifter.
Next I placed the chicken in the roasting pan and scraped the vegetables around the chicken.
I placed the roasting into a preheated 400F oven for 15 minutes. Then I reduced the heat to 350F for another hour. Check for doneness. Done when reaches 165F.
Once the chicken was cooked I removed the roasting pan from the oven.
I covered the chicken and allowed it to rest for 10 minutes before serving.
