Easy Truffles

These easy truffles are rich, creamy, and melt-in-your-mouth delicious. Made with cream cheese, they have a luscious, velvety texture.

The cream cheese adds a subtle tang that makes these truffles extra irresistible.  This recipe yields about 40 truffles but will depend on the size you choose to make them.

I divided the truffle mixture in half, creating two distinct and irresistible flavours.  One half I infused with lemon flavouring for a fresh, citrusy burst in every bite.  

The other half I flavoured with almond extract, adding a warm, nutty sweetness.

Each truffle is finished with a simple, elegant coating for added flavour and texture. Some were rolled in rich cocoa powder for a deep, chocolatey finish.

Others were coated in shredded coconut for a lightly sweet, tropical touch.

A dusting of icing sugar gives a soft, snowy look and extra sweetness.

To begin making Easy Truffles I put some softened cream cheese into a mixing bowl.

Next I used an electric hand mixer to whip the cream cheese.

Then I placed a mixture of semi-sweet chocolate chips and milk chocolate chips in the microwave on low for 20 second intervals.  I stirred the chocolate in between intervals.

After a couple of minutes of 20 second intervals the chocolate will become smooth after some stirring.

Then I poured the melted chocolate into the bowl with the whipped cream cheese.

I added in some icing sugar and used the electric hand mixer. 

Then I  added in the remaining icing sugar.

I used the electric hand mixer to incorporate all the icing sugar.

Then I divided the mixture in half and flavoured each half the way I wanted.  I did half lemon and half almond.

Next I put the bowls in the fridge for about half an hour.

While the truffle mixture was chilling I lined a baking sheet with parchment paper.

I took one bowl out at a time so the other half would remain chilled, and I used a 1 tbsp scoop and then rolled them into balls.

Then I rolled the truffles in a variety of toppings.  I chose coconut, cocoa and icing sugar.  Choose toppings that you prefer.

Simple ingredients come together to create a decadent, bakery-style treat.

They’re easy to make but taste like something fancy from a dessert shop.

  7. I divided the mixture in half and to one half I added in 3/4 tsp lemon extract and to the other half I added in 1/2 tsp almond extract.  Not as much almond extract is needed as other flavours.  Stir to combine.
  8. Place bowls in fridge and allow to firm up for about 30 minutes.
  9. Use a 1 tbsp scoop and shape the mixture into balls and place the balls onto the parchment paper lined baking sheet.
  10. Roll balls into your preferred toppings.  I used coconut, cocoa and icing sugar.
  11. Serve and Enjoy!
