The first thing I did to make M&M Brownie Cookies was to measure some Bob’s Red Mill Gluten Free All Purpose Flour, cocoa, baking powder and salt into a large mixing bowl.

Then I stirred the ingredients together well; you could also use a whisk.  I set the bowl aside.

Next I dumped some butter and semi-sweet chocolate chips into a large microwaveable bowl or measuring cup.

I put the measuring cup into the microwave on low.  I used 20 second intervals, stirring in between.

I did this until the chocolate mixture was smooth.  I quickly stirred in some vanilla extract.

Then I dumped in some granulated sugar and brown sugar.

Once the sugars were incorporated I added in 4 eggs, in two additions.  I beat the eggs well after each addition.

Next I stirred in some almond milk.

Then I scraped the chocolate mixture into the dry ingredients that I had prepared earlier.

I stirred the cookiedough until it was just combined.  It will be like a sticky brownie batter.

Then I dumped in some milk chocolate chips and some milk chocolate M&Ms.

I folded the ingredients into the batter.  It will be a bit of a workout.  This recipe would also be great for a stand mixer!

Next I lined a cookie sheet with parchment paper and sprayed it lightly with cooking spray.

I used a two tbsp scoop to transfer the cookie batter to the cookie sheet.  I was sure to leave some space for spreading.

Then I placed the cookie sheet in a preheated 325F oven for 12 – 14 minutes or until the cookies were set around the edges.

Once the cookies were set around the edges I removed them from the oven.

Then I immediately pressed some more M&Ms into the warm cookies.  This step is optional.

I allowed the cookies to cool slightly before I transferred them to a cooling rack to cool completely.

Serve them up for dessert or with a cup of tea.

The soft brownie texture of these rich chocolate cookies will make it difficult to eat just one!

Enjoy every bite of these M&M Brownie Cookies

FAQS:

What should I serve with M&M brownie cookies?

M&M brownie cookies are delicious on their own, but if you’d like to enhance your serving options or create a more balanced dessert experience, you can consider serving them with a variety of accompaniments. Here are some ideas:

  1. Vanilla Ice Cream: A scoop of vanilla ice cream pairs well with warm M&M brownie cookies. You can even make ice cream sandwiches by placing the cookies between two scoops of ice cream.
  2. Whipped Cream: Freshly whipped cream is a light and airy option to add a touch of sweetness to your cookies. You can also use flavored whipped creams like chocolate or mint.
  3. Berries: Fresh berries, such as strawberries, raspberries, or blueberries, can provide a refreshing contrast to the rich and chocolatey cookies.
  4. Chocolate Sauce: Drizzle some warm chocolate sauce over your cookies for an extra dose of chocolatey goodness.
  5. Milk: Classic cookies and milk are a timeless combination. Serve your M&M brownie cookies with a glass of cold milk for a simple and satisfying experience.
  6. Coffee or Hot Chocolate: Pair your cookies with a hot beverage like coffee or hot chocolate for a cozy and comforting treat.
  7. Nuts: Chopped nuts like pecans or walnuts can add a delightful crunch and nutty flavor to your cookies. Sprinkle them on top or serve them on the side.
  8. Caramel Sauce: A drizzle of caramel sauce can complement the sweetness of the M&M candies and add a caramel flavor to your dessert.
  9. Whipped Toppings: Flavored whipped toppings like chocolate mousse, peanut butter, or marshmallow fluff can be a fun and tasty addition.
  10. Fresh Mint: A sprig of fresh mint can provide a burst of freshness and a pleasant contrast to the rich cookies.

Feel free to mix and match these suggestions to create a dessert platter that suits your preferences and those of your guests. Ultimately, the choice of accompaniments depends on your personal taste and the overall flavor profile you want to achieve.  Make sure all accompaniments are gluten free.

How do I store M&M brownie cookies?

To store M&M brownie cookies and keep them fresh for as long as possible, you can follow these guidelines:

  1. Allow the Cookies to Cool: Let the cookies cool completely on a wire rack before attempting to store them. This prevents excess moisture from getting trapped and making the cookies soggy.
  2. Use an Airtight Container: Place the cookies in an airtight container with a tight-sealing lid. You can also use a resealable plastic bag. This container will help keep the cookies fresh and prevent them from drying out or absorbing unwanted odors from the surroundings.
  3. Layering and Separation: If you need to stack the cookies in the container, separate the layers with parchment paper or wax paper to prevent them from sticking together.
  4. Add a Slice of Bread: To keep the cookies soft and chewy, you can include a slice of bread in the container. The cookies will absorb moisture from the bread, helping them stay fresh. Replace the bread as needed when it becomes stale.
  5. Store at Room Temperature: M&M brownie cookies can be stored at room temperature for several days. If you plan to keep them for a more extended period, you can store them in the refrigerator or freezer.
  6. Refrigeration (Short Term): If you want to keep the cookies fresh for a week or two, you can store them in the refrigerator. Make sure the container is airtight to prevent moisture and odors from affecting the cookies.

Properly stored, M&M brownie cookies can remain fresh and delicious for several days at room temperature, or up to a couple of weeks in the refrigerator.  Remember that the texture and taste may change slightly over time, but they should still be safe to eat if stored properly.

Can I freeze M&M brownie cookies?

Yes, you can freeze M&M brownie cookies. Freezing is a great way to extend the shelf life of your cookies and enjoy them at a later date. To freeze M&M brownie cookies, follow these steps:

  1. Allow the cookies to cool completely at room temperature. If you freeze them while they’re still warm, they may develop ice crystals and become soggy when thawed.
  2. Once the cookies are completely cooled, arrange them in a single layer on a baking sheet or a flat surface. Make sure the cookies are not touching each other. This initial freezing step prevents the cookies from sticking together when stored in a container.
  3. Place the baking sheet with the cookies in the freezer for about 1-2 hours or until they are frozen solid.
  4. After the cookies are frozen, transfer them to an airtight container or a resealable plastic freezer bag. It’s a good idea to place parchment paper or wax paper between the layers of cookies to prevent them from sticking together.
  5. Label the container or bag with the date and the type of cookies.
  6. Store the container or bag of cookies in the freezer. They can be stored in the freezer for up to 2-3 months without a significant loss in quality.

When you’re ready to enjoy the frozen M&M brownie cookies, simply remove them from the freezer and let them thaw at room temperature for about 30 minutes to an hour, or until they have reached your desired texture. You can also reheat them in a preheated oven at 350°F (175°C) for a few minutes if you prefer them warm. Frozen cookies can be a convenient treat to have on hand for future cravings or special occasions.
