Dipped Rolo Stuffed Crackers – Gluten Free

Dipped Rolo Stuffed Crackers are a more decadent version of the traditional Ritz stuffed cracker.  This gluten free version is a very tasty treat any time of the year, but it is a quick and easy recipe for Christmas dessert trays!  

The base for this gluten free cookie variation is Schar entertainment crackers. They are the closest gluten free crackers come to Ritz.

Just add some sea salt to get that sweet and salty blend that so many crave.

This recipe yields 20 stuffed crackers.

Dipped in melted chocolate, and then drizzled with salted caramel, these little bits of heaven will make it difficult to eat just one.

To begin making Gluten Free Rolo Stuffed Crackers I placed 20 Schar Entertainment Crackers on a parchment paper lined baking sheet.

Then I placed one Rolo candy on top of each cracker.

I placed the baking sheet into a preheated 350F oven for 5 minutes.

After removing the baking sheet from the oven I sprinkled some sea salt on top of each Rolo candy.

Then I topped each one off with another Schar Entertainment Cracker and pushed down to flatten the Rolo candy.

While the Rolo candy cooled I melted some chocolate chips in the microwave at 30 second on high power and then 10 second intervals until done.

I stirred until the chocolate was smooth.

Then I dipped one side of the Rolo Stuffed Crackers into the melted chocolate and then returned them to the parchment paper.

I immediately sprinkled a bit of sea salt on top of the melted chocolate so it would stick.

Once all the crackers were topped with sea salt, I melted some Sea Salt and Caramel chips in the microwave for 30 seconds at high power. Then 10 second intervals until it was creamy.

Once it was melted enough to stir the chips until melted I added in some almond milk to make it runnier.

Then I drizzled the caramel over top of the chocolate.

Dipped Rolo Stuffed Crackers is a very easy recipe to make up for any last minute festivities.

The combination of sweet and salty is very popular and this recipe does not disappoint.

  6. Take 20 more Schar crackers and use them to press down on the soft Rolo candy to create a cracker sandwich.
  7. Allow to cool.
  8. Melt the chocolate chips in the microwave for 30 seconds and then 10 seconds intervals until done.
  9. Dip one side of the cracker sandwich into the melted chocolate and return to parchment paper.
  10. Immediately sprinkle more sea salt on top of the melted chocolate.
  11. Melt the sea salt and caramel chips in the microwave for 30 seconds and then 10 second intervals until can cream together.
  12. Stir in a splash of almond milk to get the desired drizzling consistency.
  13. Drizzle melted chips over top of the chocolate.
  14. Allow to set.
  15. Enjoy!
