To begin making this cake recipe I cracked three large eggs into a small mixing bowl and beat them until they were frothy with an electric hand mixer.

Next I creamed together some granulated sugar and margarine with an electric hand mixer in a separate, large mixing bowl.

Then I added the beaten eggs to the creamed mixture and continued beating with the electric hand mixer until the ingredients were well combined.

I added in some mashed banana, almond milk and vanilla extract.

Then I used the electric hand mixer again to combine the ingredients.

Once the mashed banana was blended in, I measured in the dry ingredients.

I dumped in some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, baking powder, baking soda and salt.

Next I used the electric hand mixer again to incorporate the dry ingredients into the batter thoroughly.

Next I sprayed a 9″ x 13″ pan with baking spray.

Then I scraped the batter into the prepared pan.

I placed the pan into a preheated 375F oven for 30 minutes or until a toothpick inserted in the center came out clean.

I allowed the cake to cool completely before decorating with vanilla frosting into which I had added a splash of banana extract.

Slice up some Gluten Free Banana Cake and your guests will not believe it is gluten free.

This moist, yet light, flavourful cake is a real hit in our home.

Enjoy this moist and delicious cake any time you have those blackened bananas lying around on your counter!

Can you substitute other sugars for the real sugar? We have to watch our sugar intake.

Hi Shirley, I think it would be okay to reduce the sugar or use a substitute. Please share your results with us if you try! Take care, Kathleen
