Gluten Free Banana Cake

Gluten Free Banana Cake is a great dessert recipe to use up those overripe bananas sitting on your counter.

This gluten free recipe is loaded with flavour and is quick to whip up.

It is loaded with banana flavour in the cake and in the frosting.

This recipe yields 12 – 16 servings, but this will vary depending on your preferred serving size.

To begin making Gluten Free Banana Cake recipe I cracked three large eggs into a small mixing bowl and beat them until they were frothy with an electric hand mixer.

Next I creamed together some granulated sugar and margarine with an electric hand mixer in a separate, large mixing bowl.

Then I added the beaten eggs to the creamed mixture and continued beating with the electric hand mixer until the ingredients were well combined.

I added in some mashed banana, almond milk and vanilla extract.

Then I used the electric hand mixer again to combine the ingredients.

Once the mashed banana was blended in, I measured in the dry ingredients.

I dumped in some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, baking powder, baking soda and salt.

Next I used the electric hand mixer again to incorporate the dry ingredients into the batter thoroughly.

Next I sprayed a 9″ x 13″ pan with baking spray.

Then I scraped the batter into the prepared pan.

I placed the pan into a preheated 375F oven for 30 minutes or until a toothpick inserted in the center came out clean.

I allowed the cake to cool completely before decorating with vanilla frosting into which I had added a splash of banana extract.

How to Make Gluten Free Banana Cake:

  1. Preheat oven to 375F and grease a 9″ x 13″ baking pan.
  2. Beat the eggs until frothy with an electric hand mixer.
  3. In a separate large mixing bowl cream the margarine and granulated sugar together with electric hand mixer.
  4. Add the eggs to the creamed ingredients and beat again until well combined.
  5. Dump in the mashed bananas and pour in the milk and vanilla extract. Beat until fully combined.
  6. Measure in the Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, baking powder, baking soda and salt. Beat until dry ingredients fully incorporated into batter.
  7. Scrape batter into the prepared 9″ x 13″ baking pan.
  8. Bake in the preheated 375F oven for 30 minutes or until toothpick inserted in center comes out clean.
  9. Allow to cool completely.
  10. Frost with homemade vanilla frosting or a tub of Betty Crocker vanilla frosting. Add a splash of banana extract for some extra flavour.

@Carole, I just made this cake today. I use coconut sugar in most of my baking. It works great with coconut sugar. Just keep in mind it may be darker In color. It still has great flavor.

Kathleen, This Gluten Free Banana Cake is Great! Thank you very much for sharing it! I couldn’t wait for it to come out of the oven. My kitchen smelled so good as it was baking. Such a wonderful cake. Light, tender and full of flavor. I followed the recipe exactly with the exception of the GF flour. I didn’t have a Bobs Red Mill on hand. I used the Cup4Cup GF flour I had.
