Gluten Free Vanilla Cake

Gluten Free Vanilla Cake is an easy and very tasty dessert recipe that can be decorated, after baking, to suit any occasion.

This versatile layer cake recipe can easily be modified.  One example is to divide the layers again to create a four layer cake for that extra special occasion.

Another example is to get out your muffin tins and make individual cupcakes.  Then you can use a variety of decorations and also have more servings!

Make your own icing or use a tub of icing from the grocery store to top off your baking success.

This cake recipe yields 8 – 10 servings.  It can also make 18 cupcakes.

Gluten Free Vanilla Cake is a light, moist cake that will make it hard to believe that it is gluten free.

Everyone will enjoy a nice slice of this layer cake.

To begin making Gluten Free Vanilla Cake I dumped some shortening and eggs into a mixing bowl.

Then I used an electric hand mixer to beat the shortening and eggs until they were well combined.

Next I added in almond milk and some vanilla extract. 

I used the electric hand mixer again to blend in the milk and vanilla on low speed.

Then it was time to add the dry ingredients.

I measured in Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, ganulated sugar, baking powder, baking soda and a bit of salt.

Then I turned the electric hand mixer to low speed until all the dry ingredients were incorporated.  

To finish the batter I turned the mixer to medium speed and beat the batter for about 1 minute.

After the batter was mixed I greased and floured two round cake pans.

Then I divided the cake batter evenly between the two cake pans.

I placed the cake pans into a preheated 350F oven for about 30 minutes or until a toothpick inserted in the center came out clean.

After removing the Gluten Free Vanilla Cake from the oven, I allowed it to cool in the pans for about 15 minutes before inverting one layer onto a serving plate.

I inverted the other layer onto a cooling rack.

Then I allowed the layers to totally cool before I made any attempt to decorate them.

Once cooled I assembled my layer cake and decorated to suit the occasion and tastes of those that would be consuming this baked delight.

For this occasion I chose vanilla frosting and some gluten free chocolate sprinkles.

On another occasion I decided to cut each layer of Gluten Free Vanilla Cake again and use chocolate frosting to mix it up a bit.  

You can even use this baking recipe to create individual cupcakes that allow you to use a variety of decorating ideas.

  6. Beat on low speed until combined and then on medium speed for about 1 minute.
  7. Divide cake batter between the two prepared pans.
  8. Place the cake pans in the preheated 350F oven for 30 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from oven and allow to cool in the pan for about 15 minutes.
  10. Invert one layer onto a serving plate and the other onto a cooling rack.
  11. Allow layers to cool completely before assembling and decorating as desired.
  12. Serve and Enjoy!

*This recipe makes 18 cupcakes. Bake cupcakes for 20 minutes or until toothpick inserted in center comes out clean.

What is the texture of the cake like? I have made other white cakes using Bob's 1 to 1 and they came out very dense and almost gummy in texture. My chocolate cake using Bob's is excellent but not the white cake and I have tried many recipes.
