Every summer I eagerly await the arrival of fresh blueberries! But thankfully frozen blueberries are available year round so I can enjoy desserts out of season as well.
Gluten Free Blueberry Cobbler is a great way to enjoy some blueberries.
Every mouthful is full of delicious blueberries contrasted with a cake like cobbler topping.
Serve it plain…
…or decorate it with a dollop of whipped topping or ice cream. Either way you will be treated to wonderful combination of flavours.
This tasty dessert will also be enjoyed by those that do not need to avoid gluten.

To begin making Gluten Free Blueberry Cobbler I dumped some frozen blueberries into a large mixing bowl.
I sprinkled them with a bit of lemon juice.
Then I sprinkled some corn starch, ground cinnamon and granulated sugar on the blueberries and stirred the mixture up well.
Once the blueberries were coated I scraped the mixture into a 9″ square baking pan.
Then I prepared the crumble topping by dumping some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, granulated sugar, baking powder, baking soda, salt, softened butter, gluten free quick oats and some maple syrup into a mixing bowl.
I used a fork to blend the ingredients together until they were crumbly.
Once the topping was well blended I stirred in some almond milk.
Next I dumped spoonfuls of the batter on top of the blueberries in the baking pan.
Then I gently spread the better out to the edges of the baking pan.
I placed the pan in a preheated 375F oven for 35 minutes or until the top was golden brown and the blueberries were bubbling.
After removing it from the oven I allowed it to cool before serving.
Once cooled I cut serving size pieces of the Blueberry Cobbler.
I spooned out the cobbler so none of the flavourful juices would be missed!
Serve Gluten Free Blueberry Cobbler warm or cold. Serve it plain or add a dollop of whipped topping or ice cream.
