Peach Cobbler – Gluten Free

As summer days wind down it is time for a dessert with fresh peaches.  Gluten free Peach Cobbler uses seasonal fruit blended with pure maple syrup and finished off with a cake like topping.

I prefer to eat peaches sliced rather than eating them like an apple so this dessert was the perfect choice.

The juicy blend of fresh cooked peaches contrasted with the cake like topping was a treat for the taste buds.

Top each serving of Peach Cobbler with a dollop of whipped topping or a scoop of ice cream to further delight your taste buds!

If you want the finishing touch can be a drizzle of pure maple syrup over the whipped topping or ice cream.

To start making this Peach Cobbler recipe I peeled and sliced up some fresh peaches.  I sprinkled a bit of lemon juice on the peaches.

After the peaches were sliced I added some pure maple syrup and a bit of corn starch to a small bowl.

Then I stirred the maple syrup and corn starch together until all the corn starch was combined.

Next, I sprinkled a bit of cinnamon into the syrup mixture.

Once the cinnamon was stirred in I poured the mixture over the cut up peaches and stirred carefully.

Then I spread the peaches evenly into a 9″ x 13″ baking dish.

Now it was time to make the cake like topping.  I dumped some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, granulated sugar, baking powder, baking soda and salt into a mixing bowl.

After stirring them together I added in some margarine and used a pastry cutter to mix everything until crumbly.

When the topping was crumbly I stirred in a bit of gluten free quick oats.

Next I added in the wet ingredients; almond milk and pure maple syrup.

The batter will be the consistency of oatmeal.

I used a scoop to drop the batter over top of the peaches.

After all the batter was on the peaches, I used a spatula to spread it out a bit.

Then I put the baking pan into a preheated 375F oven for 30 to 35 minutes or until it was golden brown and a toothpick inserted in the center came out clean.

When I removed the pan from the oven I allowed it to cool slightly before serving.  

Peach Cobbler can be served warm or cooled.  Top it off with whipped cream or ice cream.

To add a bit more maple flavour drizzle pure maple syrup over each serving as well.

  3. Sprinkle the peaches with the lemon juice.
  4. Combine the maple syrup, corn starch and cinnamon.
  5. Pour over the peaches and stir to combine.
  6. Spread the peaches out evenly in a 9″ x 13″ baking pan.
  7. Prepare topping by combining the Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, granulated sugar, baking powder, baking soda and salt.
  8. Add the margarine and use a pastry dough cutter to mix until crumbly.
  9. Stir in the quick oats.
  10. Pour in the maple syrup and almond milk. Stir to combine.
  11.  Drop batter by scoopfuls over top of the peaches. Smooth the batter out slightly before baking.
