To make this delicious Brownie Brittle I started by adding eggs, vegetable oil and some vanilla extract to a large mixing bowl.

I used a large whisk to combine the ingredients until frothy.

Next I added Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, corn starch, granulated sugar, brown sugar, cocoa powder and salt to a separate mixing bowl.

I combined the ingredients until well blended.

Then I lined an 18″ x 13″ cookie sheet with parchment paper and sprayed it lightly with cooking spray.

I spread the brownie batter out thinly on top of the parchment paper with a large spatula.

Then I sprinkled the toppings on top that I had chosen.  Use your imagination and choose topping that are gluten free and suit your taste.  You can also skip this step if you prefer your Brownie Brittle without toppings.

I like to use a mixture to have a variety of brittle.

Then I placed the brittle in a preheated 350F oven for 16 – 18 minutes.

Once baked I removed the cookie sheet from the oven.

Next I immediately used a pizza cutter to cut it into the serving sizes I prefer.

After it had completely cooled I lifted it off the cookie sheet using the parchment paper.

  5. Add the dry ingredients to the wet ingredienst and stir to combine.
  6. Use a rubber spatula to scrape mixture onto the parchment paper lined pan. Spread thinly to about 17″ x 13″.
  7. If using toppings sprinkle them on top of the brownie batter.
  8. Put pan on middle rack in oven.
  9. Bake for 16 – 18 minutes. 
  10. Remove from oven and use a pizza cutter to cut into serving size pieces.
  11. Let cool completely.
