Before dumping the ingredients into a large mixing bowl, I first pierced one medium sweet potato and then cooked it in the microwave on high for 5 minutes. Once cooked I mashed up enough to make 1/2 cup.
Once the sweet potato was ready and in the bowl, I proceeded to make the Flourless Brownies. I added peanut butter, an egg, granulated sugar, cocoa powder, vanilla extract and baking soda.
Using an electric hand mixer I blended the ingredients on low speed and then high speed until the batter was smooth and creamy.
Then I scraped the batter into a 8×8 inch baking pan that I had greased and lined with parchment paper.
I left enough overhang that would make it easier to remove brownies once cooked.
Before baking I sprinkled some semi-sweet chocolate chips over the top of the batter.
Next I put the baking pan into a preheated 350F oven for 30 minutes or until a toothpick inserted in the center came out clean.
Once baked I let it cool in the pan for 15-20 minutes.
Then using the overhanging parchment paper I transferred the brownie to a cooling rack to finish cooling.
I cut the brownies into squares to enjoy this delicious treat.
Options include melting the chocolate chips and spreading on after baking instead, or frosting the brownies before serving.
