Iced Sugar Cookie Squares are a sweet and pretty dessert that would be a hit at any Valentine gathering.  These gluten free squares were a real hit at a recent gathering. 

These pretty cookies could also dress up a dessert tray at any special event including Christmas.

The first step to making these squares was to dump some margarine and granulated sugar into a large mixing bowl.

Then I beat them together with an electric hand mixer until they were creamy.

Next I added in an egg and some vanilla extract.

Using the electric hand mixer again, I beat the ingredients together until they were light and fluffy.

Then I measured in some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, cream of tartar, baking powder and salt.

This time I used a large wooden spoon when I blended the new ingredients in.  Now I had a crumbly cookie dough.

I dumped the cookie dough into a 9×13 inch pan that I had greased and lined with parchment paper. 

To spread the dough out evenly I used a piece of plastic wrap and pushed it around and flattened it with my hands.

Once the dough was spread out in the pan I placed it in a preheated 350F oven for about 20 minutes until it began to brown around the edges.

After removing the pan from the oven I let it cool for 15 minutes before using the parchment paper overhang to transfer it to a cooling rack to cool completely

While it was cooling I prepared the frosting by putting 3 cups of icing sugar, warm water and vanilla extract into a small mixing bowl.  I used a woodent spoon to stir everything together.

Next I transferred about 1/3 of the frosting to a separate bowl and set it aside.  I added a few drops of red food colouring to the mixing bowl with 2/3’s of the frosting.

I stirred in the food colouring until it was well blended.

Then I spread the red frosting evenly over the cooled sugar cookie.

I slowly drizzled the white icing over top of the red to create a marbled effect.  I used the icing spreader to help with this step.

I let the icing set for about 3 hours before slicing the Iced Sugar Cookie into squares.

Ingredients You’ll Need to Make these Iced Sugar Cookie Squares:

  • 1/2 cup margarine
  • 3/4 cup granulated sugar
  • 1 egg, large
  • 1 tsp vanilla extract
  • 2 1/4 cups Bob’s Red Mill 1 to 1 Gluten Free Baking Flour
  • 1/2 tsp cream of tartar
  • 1/2 tsp baking powder

    Frosting:
  • 3 cups icing sugar
  • 6 tbsp warm water
  • 1/2 tsp vanilla extract
  • 3 drops red food colouring

How to Make Iced Sugar Cookie Squares:

  1. Preheat oven to 350F. Grease and line a 9×13 inch baking pan with parchment paper.
  2. Cream together the margarine and granulated sugar in a large mixing bowl using an electric hand mixer.
  3. Beat in the egg and the vanilla until light and fluffy.
  4. Measure in the Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, cream of tartar, baking powder and salt.
  5. Stir to combine into a crumbly dough using a large spoon.
  6. Dump the dough into the prepared baking pan and with the help of some plastic wrap spread it out evenly.
  7. Bake for about 20 minutes in the preheated 350F oven. When ready it will be slightly brown around the edges.
  8. Remove from oven and let cool in the pan for about 15 minutes.
  9. Use parchment paper to transfer to cooling rack to cool completely before frosting.
  10. Prepare frosting by combining the icing sugar, water and vanilla extract in a small mixing bowl.
  11. Remove 1/3 of the frosting to another bowl and add red food colouring to the remaining 2/3’s of the frosting.
  12. Spread the red frosting evenly over the cooked square.
  13. Now drizzle the white icing over top and use a knife to create a marbled effect.
  14. Allow icing to set for a few hours before cutting into squares.
  15. Serve and enjoy!
