Ground Beef Quesadilla Casserole

Ground Beef Quesadilla Casserole is an easy way to make quesadillas for the whole family.  This casserole recipe is loaded with flavour and is also a recipe that you can easily modify to suit your tastes.

This ground beef casserole yields 6 to 8 servings.

Serve it up as soon as it comes out of the oven.

Layers of cheese and ground beef are nestled inside these gluten free wraps.

Depending on personal preference you can serve it as is, or have extra salsa available on the side.  Some also may like the option of some sour cream.

To begin making Ground Beef Quesadilla Casserole I diced up  a green pepper and then another coloured bell pepper of my choosing.  I had an orange one available.

Then I put some olive oil in a skillet over medium heat.

Once the oil was heated I added in some extra lean ground beef.

I broke up the ground beef while it was cooking and added some salt and pepper.

Then I added in the peppers I had diced earlier.

Once the peppers were stirred in I added in a bit of salsa of my choosing.  Choose the heat level that works for you.

After incorporating the salsa I drained the meat mixture really well to get rid of as much fat and liquid as possible.

Next I stirred in the fajita seasoning.

While the meat mixture simmered I lined a large cookie sheet with parchment paper.

Then I cut 6 gluten free wraps in half.

I arranged the cut wraps around the edges of the cookie sheet.

Then I put a whole wrap in the center of the pan.

Next I grated some cheddar cheese.

I spread half of the grated cheese on top of the wraps and then followed it with the meat mixture.

After the meat mixture I sprinkled the remaining cheddar cheese on top.

Then it was time for another layer of gluten free wraps.  I started by placing a whole one in the center.

Then I arranged the remaining cut up wraps around the outside edges of the cookie sheet again.

Next I sprayed the wraps with cooking oil and covered the casserole with parchment paper.

Then I covered the casserole with another large cookie sheet, pressing it down into the casserole.

I baked the covered casserole in a preheated 450F oven for 15 minutes.

After removing the casserole from the oven I removed the cover.

I immediately cut the casserole into serving size squares.

Serve up Ground Beef Quesadilla Casserole with a side salad or on its own.

Have some salsa available for those that want an extra punch of flavour.  You could also use some sour cream.

  6. Drain the meat well.
  7. While meat is cooking cut 6 of the wraps in half.
  8. Place straight edge of 6 half wraps around edges of cookie sheet.
  9. Then place a whole wrap in the center.
  10. Sprinkle half of the grated cheese over top of the wraps.
  11. Then sprinkle the meat mixture over top of the grated cheese.
  12. Top meat with remainder of the grated cheese.
  13. Place the other whole wrap in the center of the cookie sheet.
  14. Place the straight edge of 6 half wraps around the edges of the cookies sheet.
  15. Spray with cooking oil.
  16. Place a sheet of parchment paper on top of the wrap layer.
  17. Press another cookie sheet on top of the casserole.
  18. Bake the casserole in the preheated oven, with the cookie sheet on top, for 15 minutes.
