Instant Pot Arborio Rice Pudding – Dairy Free

Arborio Rice Pudding is the perfect dessert any day of the week.  Dress it up to suit your tastes and this dairy free version of rice pudding will satisfy any sweet cravings.

Leave it to cook while you enjoy your dinner and serve it up warm and creamy!

Some in our home like to top it with brown sugar and add extra milk or the people that can have dairy add a bit of cream.

I enjoy mine with brown sugar plus a spinkle of cinnamon sugar that I keep mixed up in a small container to enjoy on toast or rice pudding.

To begin making Instant Pot Arborio Rice Pudding I dumped some water and almond milk into the Pot.

Then I stirred in some granulated sugar and a bit of vanilla extract.

Then I sprinkled in some Arborio rice.  I did not stir in the rice.

Next I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 14 minutes.

Once the Instant Pot was done cooking, I allowed it to do a Natural Release for 6 minutes before turning the steam release handle to the venting position.

Then I removed the lid and added the raisins. This is an optional ingredient. 

After stirring in the raisins I allowed it to cool for a couple of minutes since it was very hot.

Then I served up individual servings and allowed people to choose their own finishing touches.

Some people might like to top off their Instant Pot Rice Pudding with a bit of brown sugar.  My husband likes to add some cream since he is not dairy free.  

You could add more almond milk at this point as well.

Some in our home like to top off their Instant Pot Arborio Rice Pudding with a cinnamon sugar mixture.  I like this mixture plus some brown sugar on mine.

However you choose to dress up this quick and easy dessert you will be impressed with the outcome!
