Instant Pot Cheesy BBQ Ground Beef and Rice can be on your table in short order any day of the week.  It is enrobed in a delightful sauce that is a combination of sweet and smoky with a bit of heat.

To start making this flavourful meal I turned my Instant Pot to the Saute Less function for 10 minutes and added in some olive oil, lean ground beef and a diced yellow onion.

While the meat was cooking I stirred occasionally to break it up.  When the Pot turned off the meat was still slightly pink.

I added in one cup of the water and used it to deglaze the Pot.  This means I scraped any brown bits from the bottom of the Pot so that I would not get the Burn message later when the Pot was coming to pressure.

Then I added in the remaining water followed by some salt and pepper.

Next I sprinkled the rice over top of the liquid.  I gently pushed it into the liquid but I did not stir.

I dumped some bbq sauce on top of the rice but I did not stir.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.

While the beef and rice were cooking I prepared the sauce by combining more bbq sauce, some sweet chili Thai sauce and some pure maple syrup in a small bowl.

Once the Instant Pot was done cooking, I allowed it do a Natural Release for 5 minutes before turning the steam release handle to the venting position to finish with a Quick Release.

After removing the lid I stirred the contents together well.

Next I added in the sauce I had prepared earlier.

I also added in some shredded mozzarella and cheddar cheese blend.  

I stirred the ingredients together until the shredded cheese had melted.

Add all the cheese or reserve a handful to use as a garnish for each serving.

How to Make Instant Pot Cheesy BBQ Ground Beef and Rice:

  1. Dice the yellow onion.
  2. Turn Instant Pot to the Saute Less function for 10 minutes. Add the olive oil, lean ground beef and diced onion.
  3. Stir occasionally to break up meat. When the Pot turns off the meat will still be slightly pink.
  4. Add one cup of the water to deglaze the Pot. It is important to scrape any brown bits from the bottom of the Pot.
  5. Add the remaining water, salt and pepper.
  6. Sprinkle in the rice. Press the grains down into the water but do not stir.
  7. Dump 3/4 cup of the bbq sauce into the Pot. Do not stir.
  8. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.
  9. While the ground beef and rice cook make the sauce in a small bowl by combining the remaining 1/2 cup of bbq sauce, sweet chili Thai sauce and the maple syrup.
  10. Once the Instant Pot is done cooking, allow it to do a Natural Release for 5 minutes before turning the steam release handle to the venting position to finish with a Quick Release.
  11. Remove the lid and stir the contents well.
  12. Add the prepared sauce and the shredded cheese. Stir until the cheese is melted. If you want you can hold a bit of cheese back for garnishing each serving.
  13. Serve and enjoy!
