The first thing I did to make Instant Pot Wild Turkey Breast with Mashed Potatoes was peel and cut up the potatoes. I used six large potatoes but you can adjust due to the number of people eating the meal.
I have a steamer basket for my Instant Pot so I placed the potatoes in it. You can also wait and when meat is in the Pot place them around the meat.
Next I added the olive oil to the Pot and turned it to the sauté function.
I sprinkled poultry seasoning on the turkey breast and lowered it into the Instant Pot.
It took about three minutes a side to sear it.
Now you remove the meat from the Pot and pour in the chicken broth. Scrape the bottom of the pot well to remove all the brown bits.
This deglazing step is very important when using the Instant Pot.
Insert the wire rack and return the turkey breast to the Pot. Place the steamer basket on top of the meat.
Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 16 minutes.
When the Instant Pot was done cooking, I allowed it to natural release for 6 minutes.
Then I turned the steam release handle to the venting position to finish with a quick release.
Using oven mitts I carefully removed the potatoes and then the turkey breast.
I also poured off the broth. To 2 cups of broth I added the two packets of turkey gravy mix and placed it in the microwave for 3 minutes stirring once.
While the gravy was cooking I returned the potatoes to the Instant Pot and added some of the remaining broth and 2 tablespoons of margarine.
I used a potato masher to make the mashed potatoes.

- Add the chicken broth and scrape the bottom of the pot very well to deglaze.
- Return the turkey breast to the Pot placing it on wire rack.
- Place the steamer basket with the potatoes on top of the turkey.
- Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 16 minutes.
- When the Instant Pot is done cooking, allow it to natural release for 6 minutes. Then turn the steam release handle to the venting position to finish with a quick release.

- Pour the broth into a measuring cup. Use 2 cups of broth and add the two packets of gravy mix to it.
- Stir well and then place the gravy in the microwave on high for 3 minutes, stirring once.
- While gravy is cooking return the potatoes to the Instant Pot. Add some of the remaining broth and 2 tablespoons of margarine. Use a potato masher to make the mashed potatoes.
- Slice the turkey breast and serve with your favourite fixings.
