No Bake Chocolate Peanut Butter Cookies are a quick and easy dessert option.  This flavour combination is a favourite in our home.


Just make sure that your quick oats are gluten free and then you will be able to indulge.

This recipe yields 24 cookies when using a 2 tbsp scoop.

If adding cookies to a dessert tray you might prefer to use a 1 tbsp scoop.

These moist, chewy cookies are sure to please the taste buds of young and old alike!

To begin making these No Bake Chocolate Peanut Butter Cookies I dumped some granulated sugar, almond milk, butter and cocoa powder into a sauce pan over medium heat.

I stirred occasionally until the mixture started to boil.

Once it boiled I stopped stirring and let it cook for 2 1/2 minutes.

After 2 1/2 minutes I removed the sauce pan from the heat and stirred in some peanut butter and vanilla extract.

Then I stirred in some gluten free quick oats until all the oats were covered in the chocolate mixture.

I covered a baking sheet with parchment paper.

Then using a 2 tbsp scoop I transferred the cookie mixture to the parchment paper.  You could use a smaller or larger scoop if you prefer.

Next I placed the cookie sheets in the fridge for about 20 – 30 minutes so that the cookies would harden.

Remove the cookies from the fridge. Serve them up on a dessert tray at your next gathering or eat them on their own.

  • 1/3 cup peanut butter
  • 2 tsp vanilla extract
  • 2 1/2 cups gluten free quick oats

How to Make No Bake Chocolate Peanut Butter Cookies:

  2. Turn heat to medium and stir occasionally while the butter melts to combine the ingredients.
  3. Boil the ingredients for 2 1/2 minutes without stirring.
  4. Remove from heat and stir in the peanut butter and vanilla extract.
  5. Add the gluten free quick oats and stir until oats are covered in the chocolate mixture.
  6. Line a baking sheet with parchment paper.
  7. Scoop the cookie batter onto the prepared baking sheet. I used a 2 tbsp scoop.
  8. Place baking sheet in fridge for 20 – 30 minutes to allow cookies to harden.
  9. With the 2 tbsp scoop this reciped yields 24 cookies. 
  10. Once hardened, serve and enjoy!
