S’mores Cookies – Gluten Free

S’mores cookies are thinner, chewy cookies loaded with graham crumbs, mini marshmallows and chocolate chips.

This easy baking recipe yields 66 cookies when using a one tablespoon scoop to drop batter onto the baking sheet.

Gluten free cookies that taste as good as “regular” cookies are a real treat for the taste buds and these cookies do not disappoint.

Crisp on the outside and chewy on the inside, S’mores Cookies are sure to please all your chocolate chip cookie lovers!

To begin making S’mores cookies I dumped some margarine, brown sugar and granulated sugar into a large mixing bowl.

I used an electric hand mixer to blend the ingredients together until creamy.

Then I beat in some eggs and vanilla extract.

Once the liquid ingredients were well combined I measured in some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, gluten free graham crumbs, baking powder,  baking soda and a bit of salt.

After beating the dry ingredients in with the electric  hand mixer I dumped in some mini marshmallows and some semi sweet chocolate chips.

I folded in the marshmallows and chips with a large spoon before using a 1 tbsp scoop to drop the cookie dough onto a parchment paper lined baking sheet.

Next I placed the baking sheet into a preheated 350F oven for 10 – 12 minutes or until the cookies were turning golden brown.

After removing the S’mores Cookies from the oven I allowed them to cool on the baking sheet for a few minutes before transferring them to a cooling rack.

The melted marshmallow creates a chewy center to these delicious gluten free cookies.

  6. Blend in the dry ingredients using the electric hand mixer again.
  7. Stir in the mini marshmallows and chocolate chips with a large spatula or spoon.
  8. Drop the cookie dough, using a one tablespoon scoop or a tablespoon, onto the parchment paper lined cookie sheet.
  9. Place the cookie sheet into the preheated 350F oven for 10-12 minutes or until the cookies are turning golden brown. 
  10. Remove from oven and allow to cool on pan for about 10 minutes before transferring to a cooling rack.
  11. Once cooled serve and enjoy!
