To begin making Dipped Candied Ginger I lined a baking sheet with wax paper.

Next I placed some semi-sweet chocolate chips and milk chocolate chips in a microwaveable safe measuring cup.

Then I placed the chocolate chips in the microwave on low for 20 second intervals. I stirred the chocolate in between intervals.

While the chocolate was melting I opened some candied ginger and had it ready for dipping.

After a couple of minutes of 20 second intervals the chocolate will become smooth after some stirring.

Then I dipped the candied ginger into the melted chocolate and transferred the pieces to the prepared baking pan.

I left them to set for about a couple of hours in the fridge.
