These glossy little gems start with chewy, sweet candied ginger that already packs a warm, joyful zing.

Each piece feels like a tiny spark of spice wrapped in pure indulgence.

I used a blend of milk chocolate and semi-sweet chocolate, creating a balanced richness that doesn’t overpower the ginger’s natural heat.

You can, of course, choose any intensity of chocolate you love—from creamy milk to deep, dark, dramatic.

To begin making Dipped Candied Ginger I lined a baking sheet with wax paper.

Next I placed some semi-sweet chocolate chips and milk chocolate chips in a microwaveable safe measuring cup.

Then I placed the chocolate chips in the microwave on low for 20 second intervals.  I stirred the chocolate in between intervals.

While the chocolate was melting I opened some candied ginger and had it ready for dipping.

After a couple of minutes of 20 second intervals the chocolate will become smooth after some stirring.

Then I dipped the candied ginger into the melted chocolate and transferred the pieces to the prepared baking pan.

Dip the candied ginger in the melted chocolate and then transfer to the prepared baking pan.

FAQS:

How do I store dipped candied ginger?

You can store dipped candied ginger easily and keep it tasting wonderful. Here’s how:

1. Let the chocolate fully set first.
Make sure the chocolate coating is completely firm before storing—this prevents smudging, sticking, or cloudiness.

2. Use an airtight container.
Place the pieces in a container with a tight-fitting lid to keep them fresh and protect them from humidity.

3. Separate layers with parchment paper.
If you’re stacking them, add parchment or wax paper between layers so the chocolate doesn’t stick.

4. Keep them in a cool, dry place.
A pantry or cupboard away from heat and sunlight works perfectly. Avoid warm spots that can melt or soften the chocolate.

5. For longer storage, refrigerate.
If your kitchen is warm or you want to store them for a couple of weeks, place the container in the fridge. Just be aware the chocolate may lose a bit of its shine from condensation.

6. Freeze for long-term storage.
They freeze beautifully for up to 2–3 months. Use a freezer-safe container and let them come to room temperature before serving to prevent moisture from forming on the chocolate.

Overall:
Stored properly, dipped candied ginger stays fresh, chewy, and delicious for 1–2 weeks at room temperature, longer in the fridge or freezer.
