Apple Pudding - Gluten Free

Serve this dessert warm or top with whipped topping or ice cream if you prefer.  This simple recipe will please the taste buds of young and old alike.

To begin I peeled, cored and sliced the apples into chunks.

I sprayed a square baking pan with cooking spray and poured the apples into it. 

I sprinkled some ground cinnamon on top of the apples. 

For the batter I used a large mixing bowl and dumped in the flour, meringue powder, granulated sugar baking powder and salt.

I stirred well to combine the dry ingredients.

Then I added some maple syrup, olive oil, almond milk and a large egg to the dry ingredients.

Adding the liquid ingredients.

I used a wooden spoon to stir the wet ingredients into the dry until all were moistened.

When blended I scraped the batter into the baking pan on top of the apples.

Next I combined the boiling water, granulated sugar and cornstarch in a glass measuring cup.

I poured the boiling water mixture carefully over the batter and the apples in the baking pan.

Then I put it in a 350F oven for 45 minutes or until the center of the pudding bounced back when pressed.  

You can also use a toothpick if you only insert it into the cake portion and make sure it comes out clean.

As it cools the sauce will thicken.  You can serve Apple Pudding while it is still warm and leave as is or top with whipped cream or ice cream.

Ingredients You'll Need to Make this Apple Pudding:

  • 4 cups apples peeled and cut
  • 1 tablespoon cinnamon
  • 1 cup Bob's Red Mill 1 to 1 Gluten Free Flour Blend
  • 1 tablespoon meringue powder
  • ⅓ cup granulated sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoon maple syrup
  • 1 tablespoon olive oil
  • ½ cup almond milk
  • 1 egg, large
  • 2 cups boiling water
  • 1 cup granulated sugar
  • 1 ½ tablespoon corn starch

How to Make Apple Pudding:

  1. Preheat the oven to 350F.
  2. Grease a square baking pan with cooking spray.
  3. Peel, core and cut the apples into chunks.
  4. Spread apples out in baking pan.
  5. Sprinkle apples with the cinnamon.
  6. Measure the flour, meringue powder, granulated sugar, baking powder and salt into a large mixing bowl.
  7. Stir dry ingredients together.
  8. Measure the maple syrup, olive oil, almond milk and the egg into the dry ingredients.
  9. Stir until blended then pour over apples in the baking pan.
  10. Mix the 2 cups of boiling water with the cup of sugar and the corn starch.
  11. Pour this liquid over the batter and the apples in the pan.
  12. Bake in 350F oven for 40-45 minutes or until cake springs back when touched. Or you can use a toothpick inserted in center of the batter.
  13. Allow to cool slightly before serving. Sauce will thicken as it cools.
  14. Serve alone or with whipped cream or ice cream.
  15. Enjoy!

      You can just omit the meringue powder. I have stopped using it in my recipes because so many people don't have it on hand. I had read that it just gives gluten free baking a bit of a lift.
