Peanut Butter Chocolate Chip Banana Waffles - Gluten Free

Gluten Free Peanut Butter Chocolate Chip Banana Waffles are loaded with flavour to wake up your taste buds first thing in the morning!

These tasty gluten free waffles don't need to be reserved for breakfast.  They are loaded with peanut butter, banana and chocolate chips.

This recipe yields six Belgian waffles.  Devour them smothered in maple syrup!

Whether you serve them for breakfast, brunch or lunch these tasty waffles will quickly be devoured.

The first thing that I did was to turn my waffle iron on to preheat.  I set it to its darkest setting to make sure the waffles, loaded with so many ingredients, would be well cooked.

Then I dumped some margarine, a large egg, almond milk, peanut butter and a small ripe banana into a large mixing bowl.

I used an electric hand mixer to make sure all the ingredients were blended together well.

Then I measured in some Bob's Red Mill Gluten Free Pancake Mix.

I used a large wooden spoon to stir in the pancake mix until it was all incorporated into the batter.

Then I added some chocolate chips.

I folded them into the batter.

To cook the waffles I poured about ⅔ of a cup of batter onto my belgian waffle iron.  I could only cook one waffle at a time.

Once the ready light came on I lifted the lid and removed the waffle.

I served the waffles immediately while they were nice and hot.  Then I cooked the remaining batter.

Ingredients

  • 2 tablespoon margarine
  • 1 egg, large
  • 1 ¼ cup almond milk
  • ¼ cup peanut butter
  • 1 small ripe banana
  • 1 cup Bob's Red Mill Gluten Free Pancake Mix
  • ½ cup chocolate chips

Instructions

  1. Preheat waffle iron.
  2. Dump the margarine, egg, almond milk, peanut butter and banana into a large mixing bowl. Use an electric hand mixer to combine these ingredients until well blended.
  3. Add the Bob's Red Mill Gluten Free Pancake Mix and fold it in using a large wooden spoon.
  4. Fold in the chocolate chips.
  5. Scoop about ⅔ cup batter onto waffle iron for each waffle. I have a Belgian waffle iron so I could only make one at a time.
  6. Once cooked remove and serve.
  7. Enjoy covered in maple syrup!
