Hot Sweet Potato Slaw

Hot Sweet Potato Slaw is a flavourful side dish that will complement any meal.  Add it to your Thanksgiving menu or it is easy enough to prepare any night of the week.

This colourful dish is a perfect side for any festive occasion especially in the fall, with its blend of colour and spices.

This simple recipe will serve 6 - 8 people depending on what else you are serving.

With every mouthful you will enjoy hints of cinnamon and pepper.

To begin making Hot Sweet Potato Slaw I peeled the sweet potatoes and used my mandoline for getting the potatoes shredded.

You can use a regular grater but I used the julienne attachment on my mandoline to get long strips.

After the 8 cups of sweet potatoes were prepared (4 potatoes), I dumped them into a large mixing bowl.

I poured some olive oil over the potatoes and then used my spaghetti spoon to toss the potatoes.

Next I sprinkled in some ground cinnamon, pepper and a bit of salt.

I used the spaghetti spoon again to toss in the seasonings.

Once the seasonings were incorporated into the potatoes I transferred them into a large casserole dish that I had sprayed with cooking spray.

I baked the sweet potatoes in a preheated 400F oven for 50 - 60 minutes.

I took the sweet potatoes out about every 15 minutes to toss them with the spaghetti server again.

Once they were cooked to my liking I removed them from the oven and transferred them to a serving dish.

Hot Sweet Potato Slaw adds a burst of colour to any table.  It provides a nice light side because it is shredded.

This recipe provides a different option for using and serving this versatile vegetable.

Ingredients You'll Need to Make this Hot Sweet Potato Slaw:

  • 8 cups grated sweet potato (4 medium sweet potatoes)
  • 6 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon pepper
  • ½ teaspoon salt

How to Make Hot Sweet Potato Slaw:

  1. Preheat oven to 400F.
  2. Peel the sweet potatoes.
  3. Use a grater or julienne attachment on a mandoline to prepare the sweet potatoes.
  4. Place the prepared sweet potatoes into a large mixing bowl and add the olive oil. Toss using a spagetti spoon if you have one.
  5. Measure in the cinnamon, pepper and salt. Toss again.
