Air Fryer Rhubarb Muffins – Gluten Free

Air Fryer Rhubarb Muffins are a moist, tasty snack loaded with seasonal Rhubarb.  These gluten free muffins are great on their own or pair them with your favourite beverage.

Muffins are a great way to use rhubarb and provide a tasty snack while relaxing with your morning coffee or tea…or grab one for a snack on the run.

This Air Fryer Rhubarb Muffins recipe yields 6 – 8 muffins.

Hints of cinnamon and nutmeg add extra flavour to this delicious snack.

The first thing that I did for this Air Fryer Rhubarb Muffins recipe was to dice up enough rhubarb to measure 1 cup.

The diced rhubarb.

Then I melted some butter in the microwave.

I dumped some granulated sugar, vanilla extract, the melted butter and some eggs into a large mixing bowl.

I used an electric hand mixer to beat until frothy.

Then I measured in some Bob’s Red Mill  1 to 1 Gluten Free Baking Flour, baking powder, ground cinnamon, nutmeg and a bit of salt.  

I beat all the ingredients together with the electric hand mixer again.

Next I poured in some almond milk and used the mixer on low speed until blended.

I dumped in the diced rhubarb and white chocolate chips.  

Then I used a wooden spoon to fold in the rhubarb and chips.

Once the rhubarb and chips were incorporated into the batter I sprayed a muffin pan with cooking spray.

Then I scooped the batter in to fill the cups.  Depending on how big your muffin cups are you can yield 6 or 8 muffins.

I slid the muffin pan into the slots on my Deluxe Air Fryer and set it to Air Fry at 400F for 5 minutes.

After 5 minutes I set the air fryer to the bake setting at 350F for 10 minutes.

After removing the muffins from the air fryer I allowed them to cool in the pan for about 10 minutes.

After 10 minutes I flipped them onto their sides to continue cooling.  You could turn them out onto a cooling rack at this point.

Serve up Air Fryer Rhubarb Muffins any time of the day.

  4. Add the melted butter, eggs, granulated sugar and vanilla extract to a mixing bowl and beat with an electric hand mixer until frothy.
  5. Measure in the Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, baking powder, ground cinnamon, nutmeg and salt.  Beat to combine.
  6. Pour in the almond milk and beat on low speed until well combined.
  7. Fold in the diced rhubarb and white chocolate chips with a large wooden spoon.
  8. Scoop the batter into prepared muffin pan. If I want 6 muffins I heap the batter in the muffin pan.  If you want more muffins fill just to the top.  I get 8 muffins that way.
  9. Place muffin pan in the air fryer.
  10. Set to Air Fry on 400F for 5 minutes.
  11. After 5 minutes set to Bake at 350F for 10 more minutes.  Check with a toothpick.
  12. After removing muffins from oven allow them to cool in pans for about 10 minutes.
  13. After 10 minutes flip muffins on to their sides or turn out onto a cooling rack to cool.
  14. Enjoy!
