Candy Cookies – Gluten Free

Candy cookies are a nice crunchy cookie base loaded with oatmeal, M & M candies and chewy Turtles chocolates.  This gluten free dessert, or snack, is sure to be a hit in your home.

Chopped candy add lots of flavour and colour to these delicious cookies.

This recipe yields 72 Candy Cookies when using a 1 tablespoon scoop to drop the cookie dough onto the baking sheet.

Great for a snack with a glass of milk, or almond milk, or have one or two to complete your meal.

The first step to making Candy Cookies was to chop up about 8 regular size Turtle chocolate candies.

Then I put a 200g bag of M & M candies into a ziploc bag and crushed them using a rolling pin.  This made about 1 cup of crushed candy.

Then I dumped some margarine, granulated sugar and some brown sugar into a large mixing bowl.

I used an electric hand mixer to cream these ingredients together.

Once the ingredients were creamed I added in some large eggs and a bit of vanilla extract.

I used the electric hand mixer again to cream in the eggs and vanilla.

Next I added in the dry ingredients.  I measured in some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, gluten free quick oats that I had mixed in a blender, xanthan gum, baking powder, baking soda and salt.

I used the electric hand mixer to blend and finished with a large rubber spatula.

Next I dumped the prepared candy pieces into the bowl.

Then I folded the candy pieces into the batter with a rubber spatula until they were well incorporated.

I lined a cookie sheet with parchment paper and used a 1 tablespoon scoop to drop the cookie dough onto the prepared pan.

The dough was pretty thick so I used the bottom of a measuring cup to flatten the balls out.

Then I placed the cookie sheet into a preheated 350F oven for 10 – 12 minutes or until the Candy Cookies were turning golden brown around the bottom edge.

After removing the cookies from the oven I allowed them to cool on the baking sheet for about 10 minutes.

Then I transferred them to a rack to finish cooling.

Candy Cookies are easy to make and are a great addition to any cookie jar.

They are a firm crunchy cookie that travel well in case you want to gift them to others or share as a pot luck dessert.

  4. Dump the margarine, granulated sugar, and brown sugar into a large mixing bowl.
  5. Beat with electric hand mixer until well combined and creamy.
  6. Add the eggs and vanilla extract. Beat again with electric hand mixer until combined.
  7. Measure in the Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, ground oats, xanthan gum, baking powder, baking soda, and salt.
  8. Blend in dry ingredients using the electric hand mixer again.
  9. Dump the chopped up Turtles and the M & M candies into the mixing bowl and use a large wooden spoon to fold them into the cookie batter until well combined.
  10. Drop the cookie dough, using a one tablespoon scoop or a tablespoon, onto the parchment paper lined cookie sheet.
  11. Flatten the cookies slightly.
  12. Place the cookie sheet into the preheated 350F oven for 10-12 minutes or until the cookies are just golden brown around the bottom edge.
  13. Remove from oven and allow to cool on pan for about 10 minutes before transferring to a cooling rack.
  14. Once cooled serve and enjoy!
