To make these chocolate chip cookies I dumped vegan margarine, brown sugar and granulated sugar into a large mixing bowl.
I used an electric mixer to cream the ingredients together until there were no large lumps remaining.
I then added eggs, a bit of almond milk and vanilla extract into the creamed mixture in the bowl.
Using the electric mixer again, I combined all these ingredients
Now I added almond flour, xanthan gum, salt and baking soda.
I again used the electric mixer to blend all the ingredients well.
I added semi-sweet chipits, but you could add any type that satisfies your own personal taste.
I used a rubber spatula to fold in the chipits.
You will now have a gooey dough to work with so I use a scoop.
My scoop's capacity is 1 tbsp.
You could scrape the dough off of a regular tablespoon but you probably don't want to roll balls with your hands.
I drop the cookies onto a parchment paper lined cookie sheet.
Be sure to leave space for spreading.
I put 12 scoops on a large rectangular baking sheet.
I popped the baking sheet into the oven and removed the cookies when the edges were golden brown and the tops were just starting to brown.

After a few minutes of cooling I used a spatula to move the cookies to a cooling rack.

- Use a Tablespoon size scoop, or regular tablespoon, to drop cookies onto a parchment lined baking sheet. The dough will be a bit gooey. Leave space for spreading between the cookies.
- Place the baking sheet in the oven and bake the cookies until they are golden brown around the edges and just starting to brown on the top. 10-12 minutes.
- Remove the baking sheet from the oven and allow the cookies to cool for a few minutes before using a spatula to transfer them to a cooling rack.
