To make these chocolate chip cookies I dumped vegan margarine, brown sugar and granulated sugar into a large mixing bowl.

First ingredients in mixing bowl.

I used an electric mixer to cream the ingredients together until there were no large lumps remaining.

Use electric mixer to cream ingredients.

I then added eggs, a bit of almond milk and vanilla extract into the creamed mixture in the bowl.

Using the electric mixer again, I combined all these ingredients

Now I added almond flour, xanthan gum, salt and baking soda.

I again used the electric mixer to blend all the ingredients well.

I added semi-sweet chipits, but you could add any type that satisfies your own personal taste.

I used a rubber spatula to fold in the chipits.

Blending in the chocolate chips.

You will now have a gooey dough to work with so I use a scoop.

My scoop’s capacity is 1 tbsp.  

You could scrape the dough off of a regular tablespoon but you probably don’t want to roll balls with your hands.

I drop the cookies onto a parchment paper lined cookie sheet.

Be sure to leave space for spreading.  

I put 12 scoops on a large rectangular baking sheet.

Ready for the oven.

I popped the baking sheet into the oven and removed the cookies when the edges were golden brown and the tops were just starting to brown.

Ingredients You’ll Need to Make these Chocolate Chip Cookies with Almond Flour:

  • 2/3 cup vegan margarine
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar

  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • 2 1/2 cups almond flour
  • 1 1/2 tsp xanthan gum
  • 1 tsp salt

  • 1 1/2 cups semi-sweet chocolate chips

How to Make Chocolate Chip Cookies with Almond Flour:

  1. Preheat oven to 350F.
  2. Put margarine, brown sugar and granulated sugar in a large mixing bowl.
  3. Cream ingredients together using an electric mixer until there are no lumps remaining.
  4. Add the eggs, milk and vanilla extract to the ingredients in the bowl. Again combine ingredients using the electric mixer.
  5. Add the almond flour, xanthan gum, salt and baking soda to the bowl. Mix with the electric mixture until all ingredients are well combined.
  6. Add the semi-sweet chocolate chips, or your choice of chipits, to the bowl. Use a rubber spatula to fold them into the batter.
  7. Use a Tablespoon size scoop, or regular tablespoon, to drop cookies onto a parchment lined baking sheet. The dough will be a bit gooey. Leave space for spreading between the cookies.
  8. Place the baking sheet in the oven and bake the cookies until they are golden brown around the edges and just starting to brown on the top. 10-12 minutes.
  9. Remove the baking sheet from the oven and allow the cookies to cool for a few minutes before using a spatula to transfer them to a cooling rack.
  10. Treat yourself to a cookie!
