To begin making Peanut Butter Cup Cookies I opened up some Reese’s Peanut Butter Cup Thins.

Then I chopped them up into small pieces.

Next I dumped peanut butter, granulated sugar, vanilla extract, baking soda and a large egg into a large mixing bowl.

I stirred to combine the ingredients well.

Then I folded in 1/2 cup of the chopped candy pieces.

Next I lined a cookie sheet with parchment paper.

I used a one tablespoon cookie scoop to drop the dough onto a parchment paper lined baking sheet.

Then I used a fork to press the dough balls down slightly.

I sprinkled each cookie with a bit of coarse salt. This step is optional and depends on personal taste.

Next I baked the cookies in a preheated 350F oven for 10 minutes or until they were starting to turn golden brown around the bottom edge.

I removed the cookies from the oven.

Then I immediately pressed more of the candy pieces into the tops of the hot cookies.

After decorating them, I allowed the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.

Peanut Butter Cup Cookies are a delicious snack and can easily be packed for a lunch on the go.

This is my favourite flavour combination so I find these cookies very hard to resist.

Enjoy every delicious bite of Peanut Butter Cup Cookies!

FAQS:

How do I store peanut butter cup cookies?

Storing peanut butter cup cookies properly can help maintain their freshness and prevent them from becoming stale or losing their flavor. Here’s how you can store them:

  1. Cool Completely: Before storing the cookies, make sure they have cooled completely to room temperature. Storing warm cookies can create condensation inside the container, leading to sogginess.
  2. Airtight Container: Place the cookies in an airtight container or a resealable plastic bag. This helps prevent air from getting in and keeps the cookies fresh longer.
  3. Layering: If you need to stack the cookies, place a sheet of parchment paper or wax paper between layers to prevent them from sticking together.
  4. Room Temperature: Peanut butter cup cookies can be stored at room temperature for several days, usually up to a week. Keep them in a cool, dry place away from direct sunlight and heat sources.
  5. Refrigeration: If you want to store them for longer periods, you can refrigerate the cookies. Again, use an airtight container to prevent them from absorbing any odors from the fridge.

By following these storage tips, you can keep your peanut butter cup cookies fresh and delicious for as long as possible.

Can I freeze peanut butter cup cookies?

Yes, you can freeze peanut butter cup cookies. Here’s how you can do it:

  1. Cooling: First, allow the peanut butter cup cookies to cool completely at room temperature after baking.
  2. Preparation: Once cooled, you can place the cookies on a baking sheet lined with parchment paper, ensuring they are not touching each other. This prevents them from sticking together during freezing.
  3. Freezing: Place the baking sheet with the cookies in the freezer for about an hour or until the cookies are frozen solid. This step is known as flash freezing.
  4. Storage: After flash freezing, transfer the cookies into an airtight container or freezer bag. If using a bag, try to remove as much air as possible before sealing to prevent freezer burn.
  5. Labeling: It’s a good practice to label the container or bag with the date of freezing for easy reference.
  6. Freezer Storage: Store the cookies in the freezer. They can be kept frozen for up to 2-3 months.
  7. Thawing: When you’re ready to enjoy the cookies, remove them from the freezer and let them thaw at room temperature for about 15-30 minutes. You can also microwave them for a few seconds to warm them up, if desired.

By following these steps, you can effectively freeze peanut butter cup cookies and enjoy them later without compromising their taste or texture.
