This delicous recipe yields 12 brownies.  It may not serve 12 people because you may not be able to stop at only one!

To make these delicious brownies I started by melting margarine in an 8 cup (2 litres) microwave bowl.  

Butter can also be used but I have to avoid cow’s milk as often as possible.

Adding ingredients to melted margarine.

To the melted margarine I added granulated sugar, Bob’s Red Mill Gluten Free All Purpose Flour, cocoa, baking powder and xanthan gum.

I used a wooden spoon to blend this mixture together well.

Next add eggs and vanilla.  The mixture is again blended well with a wooden spoon.

Blending in eggs and vanilla.

After blending I scraped the batter into a square cake pan that had been lined with parchment paper.

Ready for the oven.

Place the pan in centre of your oven and bake until a toothpick inserted in centre comes out almost clean.

Let cool before using the edges of the parchment paper to remove the brownie from the pan.

Ingredients You’ll Need to Make these Gluten Free Brownies:

  • 1/2 cup margarine or butter
  • 1 cup granulated sugar
  • 1/2 cup Bob’s Red Mill Gluten Free All Purpose Flour
  • 1/3 cup cocoa
  • 1 tsp baking powder
  • 1/2 tsp xanthan gum
  • 2 eggs, large
  • 1 tsp vanilla

How to Make Gluten Free Brownies:

  1. Preheat oven to 375F.
  2. Line a square pan with parchment paper.
  3. Melt 1/2 cup margarine or butter in a large microwaveable bowl.
  4. Add granulated sugar, gluten free all purpose flour, cocoa, baking powder and xanthan gum to bowl.
  5. Blend ingredients well.
  6. Add 2 eggs and the vanilla and beat them into the ingredients already in the bowl.
  7. Use a rubber spatula to scrape mixture into the parchment paper lined pan.
  8. Put pan on middle rack in oven.
  9. Bake for 25-30 minutes or until a toothpick inserted in center comes out almost clean.
  10. Let cool and then use parchment paper to remove brownie from the pan.
  11. When finished cooling slice into squares.
