Gluten Free Peanut Butter Cookies

Peanut Butter Cookies are a classic that I really missed when I had to start eating gluten free.

The first thing that I did to create these cookies was to add peanut butter and shortening to a large mixing bowl.

I then used an electric mixer to cream these two ingredients together.

Next I added eggs and some vanilla to the mixing bowl.

I again used the electric mixer to blend the ingredients together well.

Now it is time to add Bob's Red Mill All Purpose Flour, brown sugar, sugar, baking soda salt and xanthan gum.

I started blending in these dry ingredients with a rubber spatula before finishing up with the electric mixer.

I lined a baking sheet with parchment paper and used a small scoop to drop balls onto the sheet.

I pressed down the balls of cookie dough with a fork before baking them in the oven.

After 8 - 10 minutes I removed them from the oven.  I allowed the Gluten Free Peanut Butter Cookies to cool for a minute before removing them to a cooling rack.

Ingredients You'll Need to Make these Gluten Free Peanut Butter Cookies:

  • ⅔ cup shortening
  • 1 cup peanut butter
  • 2 teaspoon Vanilla
  • 3 large eggs
  • 2 ½ cups Bob's Red Mill All Purpose Gluten Free Flour
  • ⅔ cup brown sugar
  • ⅓ cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon xanthan gum

How to Make Gluten Free Peanut Butter Cookies:

  1. Preheat oven to 350F.
  2. Line a baking sheet with parchment paper.
  3. Add peanut butter and shortening to a large mixing bowl.
  4. Use an electric mixer to cream these ingredients together.
  5. Add the vanilla and the eggs to the mixing bowl.
  6. Blend in these ingredients using the electric mixer.
  7. Add the flour, brown sugar, sugar, baking soda, salt and xanthan gum to the creamed mixture.
  8. Use a rubber spatula to begin blending in these dry ingredients. Switch to the electric mixture to finish blending.
  9. Use a scoop or tablespoon to drop balls of dough onto a parchment lined baking sheet.
  10. Use a fork to slightly flatten the dough.
  11. Place in the preheated oven and bake for 8 -10 minutes.
  12. Remove from oven when edges are brown and tops are slightly darkened.
  13. Allow to cool for a minute on the baking sheet before transferring them to a cooling rack.
  14. Enjoy!
