Crispy Peanut Clusters

Crispy Peanut Clusters are little mounds of sweet, perfection that crunch with every bite.  The glossy chocolate shell melts on your tongue while the crisp rice and roasted peanuts create a satisfying snap.

The airy crisp rice cereal adds a light crackle that keeps these clusters irresistibly crunchy.

Sweet and nutty, they balance rich chocolate with the deep, roasted flavour of peanuts.

This recipe yields 33 delicious mounds but the yield will vary depending on how large you choose to make each cluster to suit your needs.

Each bite is a symphony of textures—smooth, crunchy, and melt-in-your-mouth all at once.

The crisp rice gives them that nostalgic, candy-shop crunch you can’t help but crave.

To begin making Peanut Clusters I placed chocolate in a large microwaveable measuring cup.  This time I used milk chocolate chips and semi-sweet chocolate chips.

Then I placed the chocolate chips in the microwave.  I melted them on high for 1 minute.

While the chocolate was melting I lined a cookie sheet with wax paper.

After a minute I removed the chocolate from the microwave and gave it a stir.  I then returned it to the microwave for 20 second intervals, stirring after each interval.

I continued with the intervals until the chocolate was smooth.

Then I dumped in some roasted unsalted peanuts.

I also dumped in some gluten free crisp rice cereal.

I stirred until the peanuts and cereal were all coated in the melted chocolate.

Next I used a tablespoon to drop the chocolate mixture onto the prepared cookie sheet.

You might need more than one sheet depending on the size and spacing you use for your clusters.

After all the mixture was used up, I placed the cookie sheets in the fridge for a couple of hours to allow the chocolate to set.

Crispy Peanut Clusters are the perfect balance of chewy, crisp, and rich—never too heavy, just right.

The crisp rice cereal keeps them airy and fun, with a playful texture that never softens too soon.

Every bite is a sweet reminder that the simplest treats often bring the biggest smiles.

These Crispy Peanut Clusters are equally at home in a festive gift box or a late-night snack jar.

FAQs:

How do I store crispy peanut clusters?

You’ll want to keep those crispy peanut clusters nice and crunchy, so storage is all about protecting them from heat and humidity:

  • Room temperature: Store them in an airtight container at room temperature for up to 1 week. Line the container with parchment or wax paper and layer the clusters with more paper between to prevent sticking.

  • Cool, dry spot: Keep them away from sunlight, the stove, or anywhere warm—heat can cause the chocolate to soften and the cereal to lose its crunch.

  • Refrigerator: If your kitchen is warm, you can refrigerate them. Just make sure they’re in a tightly sealed container to prevent moisture from softening the cereal. For best texture, let them sit at room temp for a few minutes before eating.

  • Freezer: They freeze well! Place clusters on a baking sheet to firm up, then transfer to a freezer-safe bag or container with parchment between layers. They’ll keep for about 2 months. Thaw at room temp before serving.
