To begin making Cheesy BBQ Chicken Breasts I first patted dry some chicken breasts. 

Then I put some olive oil into a skillet over medium heat.

Next I carefully cut a pocket in each breast. 

I folded I slice of Monterey Jack Jalapeño cheese inside each pocket.

Then I used metal skewers to hold the chicken closed.

Then I placed the chicken breasts in the heated oil.

Next I generously brushed each breast with gluten free bbq sauce.

I put the lid on the skillet and cooked the chicken breasts for 6 - 8.  I basted the chicken again after about 4 minutes.

Then I turned the chicken breast to brown them on the other side.

I generously basted the breasts with bbq sauce before putting the lid back on to cook for another 6 - 8 minutes.  I basted again at the half way point.

A glossy finish of barbecue glaze makes the chicken look as good as it tastes.
