Almond Flour Apple Cake

Almond Flour Apple Cake is a delicious gluten free dessert recipe.  This moist, dark cake is the perfect ending for any meal.

Loaded with diced apples and spices, this cake is delicious with or without frosting.  

Add a splash of maple flavouring to the frosting if you choose to go that route.

This recipe yields 12 servings, but that will vary and you can slice to suit your needs.

To begin making this Almond Flour Apple Cake I diced some apples.

Then I stirred together some brown sugar and cinnamon.

I added the diced apples to the brown sugar mixture and stirred until combined.  Then I set the apples aside until needed.

For the cake I combined some almond flour, arrowroot flour, granulated sugar, baking powder, baking soda, ground cinnamon, nutmeg, cloves and salt in a large mixing bowl.

After blending all the dry ingredients I made a well in the center and poured in some vegetable oil and vanilla extract.

Once I had stirred in the oil and vanilla with a large wooden spoon I added in some large eggs.

I used the wooden spoon again to beat in the eggs.

Then I greased a 9″ x 13″ baking pan and spread out half of the batter.

Next I used a slotted spoon to sprinkle half of the apples on top of the batter in the pan.

I repeated the layers with the rest of the batter and diced apples.

Then I placed the pan in a preheated 350F oven for 50 minutes or until a toothpick inserted in the center came out clean.

When the cake is cool you can serve as is or whip up some homemade maple frosting.

For the frosting I combined some shortening and maple extra in a mixing bowl.

After beating them together with an electric hand mixture until fluffy, I measured in some icing sugar and almond milk.

I used the electric hand mixer again to beat in the icing sugar and milk until combined and then on high speed for about 2 minutes.

Once the frosting was ready I spread it over the cake in the pan.

How to Make Almond Flour Apple Cake:

  1. Preheat oven to 350F and spray a 9″ x 13″ pan with cooking spray.
  2. Dice the apples.
  3. Mix together the brown sugar and first amount of ground cinnamon.
  4. Mix the brown sugar and cinnamon mixture into the diced apples and set aside.
  5. Measure the almond flour, arrowroot flour, granulated sugar, baking powder, baking soda, second amount of ground cinnamon, nutmeg, cloves and salt into a large mixing bowl.  Stir to combine.
  6. Make a well in center of dry ingredients and pour in the vegetable oil and vanilla extract. Stir to combine.
  7. Add the eggs.  Stir to combine.
  8. Spread half of the cake batter into the prepared pan.
  9. Using a slotted spoon, to leave out any liquid, sprinkle half of the diced apples over the batter in the pan.
  10. Repeat the layers using the remainder of the batter and diced apples.
  11. Bake in the preheated 350F oven for 50 minutes or until a toothpick inserted in the center comes out clean.
  12. Remove from oven and allow to cool. 
  13. Once cooled serve, or frost before serving.
