Gluten Free Corn Casserole - Dairy Free

Gluten Free Corn Casserole is a quick side dish that can easily be whipped up on a busy week night.  This dairy free version uses gluten free flour as a thickener.

Homemade creamed corn is the base for this casserole dish and definitely gives it a fresher taste than the canned version!

This side dish recipe yields 6 - 8 servings.

To begin making Gluten Free Corn Casserole I diced up one small yellow onion. 

Then I poured some almond milk into a medium size sauce pan over medium heat.

 

I added in some granulated sugar and salt. At this time I also dumped in the diced onion.

I whisked in some black pepper too.

Next I used a bit more almond milk to mix with Bob's Red Mill 1 to 1 Gluten Free Baking Flour to make a paste.

I whisked the paste into the warm milk mixture.

I allowed the sauce to thicken and just begin to boil before reducing the heat to med/lo and adding some frozen corn.

I also added in 1 cup of bacon crumble and let the mixture simmer for 10 minutes.

While the corn was cooking I prepared the topping by crushing up some Schar Entertainment Crackers (a bit like Ritz crackers).

I also crushed up some sour cream and onion potato chips (you could use any flavour).

Then I mixed the crushed crackers and chips with brown sugar, melted margarine and an egg.

When the corn mixture was ready I transferred it to a medium size casserole dish that I had sprayed with cooking spray.  Mine was 1.8 litres.

Next I sprinkled the prepared topping over the corn mixture.

I placed the casserole dish in a preheated 400F oven for 10 - 15 minutes.

This dairy free/gluten free recipe creates a thick creamy casserole, that will also satisfy the taste buds of those who do not have to avoid these ingredients.

Ingredients You'll Need to Make Gluten Free Corn Casserole:

  • 2 ¾ cup almond milk (divided)
  • 1 ½ teaspoon salt
  • 2 teaspoon granulated sugar
  • ½ teaspoon black pepper
  • ¼ cup Bob's Red Mill 1 to 1 Gluten Free Baking Flour (divided)
  • 4 cups frozen corn
  • 1 cup bacon crumble
  • Topping:
  • 1 cup Schar Entertainment Crackers crushed (26 crackers)
  • ⅔ cup Sour Cream and Onion Potato Chips crumbled (or any preferred flavour)
  • 1 egg
  • 2 tablespoon brown sugar
  • 3 tablespoon margarine melted

How to Make Gluten Free Corn Casserole:

  1. Preheat oven to 400F and spray a casserole with cooking spray.
  2. Chop up the yellow onion.
  3. Pour 2 ½ cups of the almond milk into a medium size sauce pan over medium heat.
  4. Add the granulated sugar, salt, onion and black pepper.
  5. Mix the remaining ¼ cup of almond milk with the ¼ cup of gluten free flour to form a paste.
  6. Whisk the paste into the milk mixture in the sauce pan.
  7. Continuing stirring until the mixture thickens and just comes to a boil.
  8. Reduce heat to med/lo, add the corn to the sauce.  Stir to combine.
  9. Add the bacon crumble to the pot and stir to combine.
  10. Allow the corn mixture to simmer for for 10 minutes.
  11. Prepare topping by first crushing up the Schar crackers.
  12. Crush the sour cream and onion chips.
  13. Stir the crushed ingredients in a small mixing bowl with the egg, brown sugar and the melted margarine.
  14. After 10 minutes transfer the corn mixture to the casserole dish.
  15. Sprinkle the prepared topping over the corn mixture.
  16. Bake in the preheated 400F oven for 10 - 15 minutes or until topping is browned.
