To start making Instant Pot Sweet & Sour Pork and Rice I cut 4 pork loin chops into bite sized pieces.  This was about 2 lbs of pork.

Then I put some olive oil into the Instant Pot and turned it to the Saute Less function for 3 minutes.  I added the cut up pork.

While using the Sauté function I stirred the meat to brown the sides.

When the Saute function turned off the meat was still very pink.

I added 1/2 of the water to the Pot to deglaze it by scraping any brown bits from the bottom.

Next I added the remaining water before sprinkling in the rice and gently pushing it down into the water.  I did not stir.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 6 minutes.

While the pork and rice were cooking in the Pot I prepared the sauce.

First I mixed together some brown sugar and some corn starch.

Then I added some pineapple juice, rice vinegar (you could use apple cider vinegar instead), ketchup and soy sauce.

Using a spoon I stirred all the ingredients together.  At this time I also cut up an orange pepper and one bunch of broccoli florets.

Once the Instant Pot was done cooking, I immediatley turned the steam release handle to the venting position to finish with a Quick Release.

I removed the lid and stirred the contents well.

To finish this meal I turned the Instant Pot back on to the Saute Less function for 5 minutes.

Then I stirred in the sauce that I had prepared earlier before adding in the chopped orange pepper and broccoli florets.

After the Pot shuts off it is time to enjoy your Instant Pot Sweet & Sour Pork and Rice.

This easy recipe is sure to please all appetites.

It is very easy to change up the added vegetables to suit the tastes of your family or serve some up to your picky eaters before adding any vegetables at all!

Hi Sandy, I cannot eat gluten and this is a gluten free recipe page. I have access to gluten free soy sauce where I live. If you do not you would need to replace with a local substitute. Kathleen

Hi Linda, Sure you can switch up the juice. It will change the flavour and as long as you are fine with that it is okay. There is a recipe for Orange Chicken you might be interested in.... Take care, Kathleen
