Peanut Butter Cup Cookies are the perfect gluten free dessert for peanut butter lovers. There are not many who can resist the chocolate, peanut butter combination!
These are one of the cookies I missed when I had to go gluten free and limit my dairy intake. Now I have to be careful I don’t eat too many of these delicious treats in one sitting.
Whether you eat these at home or pack them for lunches these gluten free cookies will really satisfy your peanut butter craving.
You can freeze some of your cookies to enjoy chunks of peanut butter goodness weeks down the road as well.
That is of course if you have any left at the end of the first day!

To begin making Peanut Butter Cup Cookies I opened up some Reese’s Peanut Butter Cup Thins.
Then I chopped them up into small pieces.
Next I dumped peanut butter, granulated sugar, vanilla extract, baking soda and a large egg into a large mixing bowl.
I stirred to combine the ingredients well.
Then I folded in 1/2 cup of the chopped candy pieces.
Next I lined a cookie sheet with parchment paper.
I used a one tablespoon cookie scoop to drop the dough onto a parchment paper lined baking sheet.
Then I used a fork to press the dough balls down slightly.
I sprinkled each cookie with a bit of coarse salt. This step is optional and depends on personal taste.
Next I baked the cookies in a preheated 350F oven for 10 minutes or until they were starting to turn golden brown around the bottom edge.
I removed the cookies from the oven.
Then I immediately pressed more of the candy pieces into the tops of the hot cookies.
After decorating them, I allowed the cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
Peanut Butter Cup Cookies are a delicious snack and can easily be packed for a lunch on the go.
This is my favourite flavour combination so I find these cookies very hard to resist.
