Baked Macaroni and Cheese - Gluten Free

Baked Macaroni and Cheese is a quick and easy recipe your whole family will enjoy.  This gluten free meal is loaded with elbow pasta, ground beef, tomato and cheese to create a hearty meal for any day of the week.

There is nothing that says comfort food quite like loads of melted cheese covering a steaming hot pasta dish!

Cook your macaroni in a pot that is oven safe and clean up is a breeze.  This is almost a one pot meal.

This hearty meal will yield 8 servings.

Every mouthful is loaded with flavour and melted cheese.

To begin making Baked Macaroni and Cheese I put some water on to boil and cooked some pasta according to the package directions.

This is the gluten free pasta that I used.

While the pasta was cooking I put some olive oil into a frying pan and turned the heat to medium.  When the oil was heated I added in a pound of lean ground beef.

I broke the ground beef up while it was cooking.

When the elbow macaroni was cooked I drained it in the sink and gave it a quick rinse.

Then I returned it to the pot over medium/low heat.

Next I added in some almond milk and a can of diced tomatoes.

After giving it a quick stir I added in 3 cups of grated marble cheddar cheese.

Once the cheese was stirred in I added the cooked ground beef to the pot.

I stirred until the meat was well incorporated into the pasta mixture.

The last addition was to sprinkle another 3 cups of the grated cheese evenly over the top of the macaroni mixture.

Then I set the pot into a preheated 400F oven for 30 to 45 minutes. The amount of time depends on how you like your cheese.  I took mine out shortly after 30 minutes but my husband said he would have liked the cheese browned more and not just melted.

Baked Macaroni and Cheese is a real comfort food recipe that can be made quickly any day of the week.
